Supplies Used
- Soup Pot – I love using one of my large dutch oven pots for making soup.
Can I Use Regular Chicken?
Of course! You can easily swap rotisserie chicken for shredded chicken breast or thighs.
Another Way to Make This Soup
You can also convert this to a crock pot meal by adding chicken breasts to your crock pot and cooking it on low for 4-6 hours. Remove chicken from the crock pot and shred it using forks or in your KitchenAid mixer, quickly sautéing the onions, and then adding all of the ingredients back into the crock pot and heating until warm.
Leftovers
- Place leftovers in an airtight container and store in fridge. Reheat in microwave for 2-3 minutes or in a pot on the stove.
- Freeze individual servings (or the rest of the batch) for up to a month. Let the soup thaw and reheat it for the perfect, quick lunch or dinner!
