Tortilla Soup

This delicious Tortilla Soup is the perfect meal on busy nights, or any night! Growing up, my parents made this soup all the time and while I didn’t always love it as a kid, it’s one of my favorite quick and easy meals now that I’m an adult! So, grab a rotisserie chicken on the way home from work and put this meal together in just about 30 minutes! And, with so many topping options to add on top, this quick and easy meal is one that you are bound to love!

  • Soup Pot – I love using one of my large dutch oven pots for making soup.

Can I Use Regular Chicken?

Of course! You can easily swap rotisserie chicken for shredded chicken breast or thighs.

Another Way to Make This Soup

You can also convert this to a crock pot meal by adding chicken breasts to your crock pot and cooking it on low for 4-6 hours. Remove chicken from the crock pot and shred it using forks or in your KitchenAid mixer, quickly sautéing the onions, and then adding all of the ingredients back into the crock pot and heating until warm.

Leftovers

  • Place leftovers in an airtight container and store in fridge. Reheat in microwave for 2-3 minutes or in a pot on the stove.
  • Freeze individual servings (or the rest of the batch) for up to a month. Let the soup thaw and reheat it for the perfect, quick lunch or dinner!

Ingredients
  

  • 17 ounces rotisserie meat 1 traditional size rotisserie chicken
  • 1 tablespoon olive oil
  • 1 cup chopped onions 140g
  • 10 ounce can rotel original diced tomatoes & green chilies
  • 32 ounce chicken broth
  • salt & pepper to taste

Instructions
 

  • In a soup pan over medium heat, saute onions in olive oil. Cook until onions become translucent.
  • Add chicken broth, diced tomatoes, and pulled chicken.
  • Bring to a boil, reduce heat to low. Simmer for 20–30 minutes.
  • Enjoy with your favorite tortilla chips, strips, or a variety of other toppings.

Notes

Add additional toppings if desired: cheese, tomatoes, sour cream, green onions, avocado, tortilla strips, etc.
