Italian Stuffed Peppers are a fun and delicious twist on regular stuffed peppers with the addition of Italian sausage! If you’re a green pepper fan, you’ll love these peppers loaded with ground turkey, Italian sausage, rice, veggies, and cheese! I love that this recipe makes 5 servings that you can make ahead of time. They make for a low carb, quick, easy, and healthy lunch or dinner! In fact, these are one of Chad’s favorite meals and I’m sure you’ll love them, too!

Ingredients

  • Extra lean ground turkey (99/1)
  • Mild Italian sausage
  • Bell peppers
  • Onions
  • Mushrooms
  • Tomato paste
  • Tomato sauce
  • Rice
  • Salt
  • Italian seasoning
  • Parsley
  • Oregano
  • Parmesan cheese
  • Part skim mozzarella cheese

REHEATING INSTRUCTIONS

These bowls can easily be reheated right in the microwave for 2-3 minutes if you’re in a hurry. If you have more time you can preheat the oven to 350º and warm them back up for about 10 minutes for a quick and easy meal.

FREEZING INSTRUCTIONS

If needed, you can freeze these Italian Stuffed Peppers. Let them cool, cover with the lid, and store for up to a month in the freezer. Make sure you let the bowls sit out and defrost a little bit, so they don’t crack when you reheat them.

4 cup glass bowls -Make sure the bowls you’re purchasing are oven safe. They will say so on the label if purchasing in store.

Half size sheet pan – This is the perfect size for 5, 4 cup glass bowls. You can, of course, use a full size sheet pan but your bowls will slide around.

Italian Stuffed Peppers

Ingredients 

  • 16 oz. extra lean ground turkey, 99/1
  • 16 oz. mild Italian sausage
  • 5 bell peppers
  • 1/2 cup onion, diced, (75g)
  • 1/2 cup mushrooms, diced, (35g)
  • 2 tablespoons tomato paste
  • 8 oz. can tomato sauce
  • 1/2 cup cooked rice, 4 oz.
  • 1 teaspoon salt
  • 1/2 tablespoon Italian seasoning
  • 1 teaspoon parsley
  • 1 teaspoon oregano
  • 1 oz. parmesan cheese
  • 3 oz. part skim mozzarella cheese

Instructions 

  • Preheat the oven to 400 degrees and arrange 5 oven safe containers on a cookie sheet.
  • Slice the tops of the peppers off so they will fit in the meal prep bowls (set the tops aside, you will use these later). Rinse well, place 1 in each bowl and spray with some cooking spray. Bake for 15 minutes.
  • Over medium high heat, cook the sausage and turkey until no longer pink. Add the onions, mushrooms, and leftover bell pepper (dice up the tops around the stem).
  • Cook for 3-5 minutes until the veggies are soft.
  • Add the seasonings, tomato sauce, paste, rice, and parmesan cheese. Mix well and stuff in peppers. Top with the mozzarella cheese and place back in the oven another 5 minutes to melt the cheese.
  • Let cool before covering with lids and placing in the refrigerator. Reheat in the microwave for 2-3 minutes.

    I didn’t expect to like this, because I normally hate Italian sausage, but I was curious, and I loved it! Husband loved it too. It’s one of my top favorites of the meal prep recipes. I prefer to use all red peppers, I feel the sweetness makes it taste even better. I had extra filling, probably due to the size of my peppers, so I recommend being mindful of that and maybe buying extra peppers to fill.
