Greek Whipped Feta Dip
Equipment
Ingredients
- 8 oz block feta cheese
- 3/4 cup plain non-fat Greek yogurt
- 2-3 cloves garlic
- Juice of 1/2 lemon
- 1-2 tablespoons fresh dill, chopped
- 1 tablespoon extra-virgin olive oil
- 1 cucumber, diced
- 2 Roma tomatoes, diced
- 1/4 red onion, finely diced
- 10 olives, diced
- Balsamic vinegar, optional
Instructions
- Add the feta, Greek yogurt, garlic, lemon juice, and half of the dill to a food processor.
- Blend until combined. With the processor running, drizzle in about half of the olive oil.
- Continue blending until mostly smooth. (A slightly grainy texture is normal.)
- Spread the whipped feta onto a shallow dish or plate, creating a slight well in the center.
- In a small bowl, toss the cucumber, tomatoes, red onion, and olives with the remaining olive oil, a squeeze of lemon juice, the remaining dill, and salt and pepper to taste.
- Spoon the veggie mixture over the whipped feta.
- Finish with a drizzle of balsamic vinegar, if desired.
- Serve with pita bread, pita chips, or crackers.
