Ten Minute Ceviche

This simplified, ten minute ceviche is hard to beat if you’re looking for something macro friendly to serve before dinner or take to a BBQ this summer. With 6.6 grams of protein per 100 gram serving, it’s easy to fit some into your day. Serve it with some salted Popcorner chips or make your own with some low carb tortillas. I’ll share how to make those below also!
This recipe is actually from cookbook 2, Home Cooked Meals For Every Macro Budget. Some of my favorite macro friendly appetizers are in that cookbook if you’re looking for a few more.
To make some quick low carb chips yourself, just slice up some low carb tortillas (Joseph’s Lavash Wraps from Walmart or Cutdacarb are good ones) with a pizza cutter. Give them a quick spray with cooking oil and salt them good. Air fry at 350 for 2 minutes, flip, and cook another 2 minutes. If you don’t have an air fryer just heat them up right over the stove in a pan.

Ingredients
- 200g cooked shrimp, diced
- 3 Roma tomatoes, diced (300g)
- 1/2 red onion, diced (150g)
- 1/2 large cucumber, diced (150g)
- 1 medium avocado, diced (140g)
- 1 bunch of cilantro, minced
- Juice of 3 limes
- 1 jalapeño, diced (optional if you like spice)
- 1 teaspoon salt (I just keep adding until it
- tastes right)
Instructions
- In a bowl combine all ingredients.
- Salt well and enjoy!
