Ingredients

  • 1/2 cup Italian bread crumbs, or plain + 1/2 tablespoon Italian seasoning
  • 2/3 cup fat free Fairlife milk
  • 1.5 pounds lean ground beef, 90/10
  • 1/4 cup parmesan cheese
  • 1 tablespoon fresh parsley, or 1 teaspoon dried
  • 1/4 teaspoon garlic powder
  • pinch of salt and pepper
  • 12 count package King’s Hawaiian sweet rolls
  • 1 cup marinara sauce
  • 2 ounces mozzarella cheese, shredded
  • 1 teaspoon cooking spray, 5g
  • 1/8 teaspoon garlic salt

Instructions

  • Preheat oven to 400 degrees and line a sheet pan with parchment paper.
  • Combine the bread crumbs and milk in a small bowl and set aside. Let soak at least 5 minutes.
  • In a large mixing bowl combine the beef, parmesan cheese, parsley, garlic powder, salt and pepper. Gently mix in the soaked bread crumbs.
  • Using a small cookie scooper (or your hands) form the meat mixture into small meatballs (Mine made 34). Bake in the oven 15 minutes, or until the internal temperature of the meatballs reaches 165 degrees.
  • Scoot meatballs aside to make room for the rolls. Slice the rolls in half lengthwise and place the bottom half of the rolls on the pan. Evenly distribute the meatballs on top of the rolls.
  • Evenly pour the marinara on top of the meatballs. Spread the mozzarella on top and cover with the top half of the rolls. Spray the top of the rolls with small amount of cooking spray and sprinkle on some garlic salt.
  • Bake in the oven 5-8 minutes, or until the cheese is melted and the rolls are toasty.
