Fresh Tomato Basil Bruschetta

If you haven’t yet come up with a game plan for Super Bowl Sunday, I’m here to save the day!  I had every intention of sharing this fun, light recipe last week but life has been nuts to say the least.  I’m taking one for the team tonight and staying up way past my bedtime to get this macro friendly bruschetta recipe up for you guys. There really isn’t anything worse than showing up to America’s favorite party on a health kick.  You don’t want to be the weirdo eating nothing, but you don’t want to splurge on foods that just don’t seem worth it to you.  I have a great idea…take a healthy dish to share with everyone! I have always been a fan of bruschetta, but I honestly hadn’t made it in a really long time before now.  I saw these tomatoes at Smith’s and the thought occurred to me that this would be a great and reasonable snack to have.  I gathered up a few other ingredients, grabbed a fresh baguette, and went for it.  It turned out awesome and I ate the whole jar of bruschetta myself within 2 days. No shame guys, it’s super macro friendly and great on just about anything!

I’m not super fancy and didn’t grill my bread or anything, but you easily could.  I sliced my baguette nice and thin and topped each one with 1 tablespoon of the bruschetta.  It’s so good you guys!  Each thin sliced serving is only 7.3C/.9F/1.3P! I easily fit 4 pieces into my macros no problem.

Fresh Tomato Basil Brushetta

Ingredients
  

  • 2 cups chopped cherry tomatoes
  • 1/4 chopped red onion
  • 1 clove garlic chopped
  • 1/4 cup fresh chopped basil
  • 1/2 teaspoon extra virgin olive oil
  • 1/2 teaspoon balsamic vinegar
  • some salt and pepper

Instructions
 

  • Combine all ingredients in a bowl and toss gently.
  • Refrigerate at least 1 hour before serving.
  • Enjoy on sliced baguette or french bread.
