Simple. Nutritious. Delicious.
Eating a beautiful salad outside in 70 degree weather is my idea of sheer bliss. Spring in Las Vegas lifts my mood. My family looks forward to summer vacations, camping trips, and BBQ season! This Berry Summer Salad is the perfect meal for a light lunch or can add color and nutrition to your main course for dinner!
For this simple salad, I threw together spinach, strawberries, blueberries, sliced almonds, and goat cheese. I also added cooked chicken to add a little bit of protein to make this a lunch that would hold me over until dinner. The dressing couldn’t get any easier and it goes great with this salad! Mix olive oil, balsamic vinegar, crushed garlic, and fresh lemon juice. Scroll to the bottom of the page for the full recipe.
There’s something about the combination of balsamic dressing, berries, and goat cheese that makes my taste buds happy.

Ingredients
- 1 pkg Raw Spinach
- 1-2 cooked Chicken Breasts sliced (optional)
- 1.5 cups Strawberries
- 1.5 cups Blueberries
- 1/4 cup Goat Cheese
- 1/4 cup sliced Almonds
- Dressing
- 4 tablespoons Olive Oil
- 4 tablespoons Balsamic Vinegar
- 1 fresh Garlic Clove, crushed
- Juice of 1 lemon
Instructions
- Put all salad ingredients in a large bowl and toss.
- For dressing, mix together olive oil, balsamic vinegar, crushed garlic clove and juice of 1 lemon.
- Add dressing as desired to salad. Enjoy!
