Baked Artichoke Chicken and Asparagus {Whole30 Compliant}

When I first started my baby weight loss journey, I had this fear that all I would ever eat again was plain chicken breast. I don’t love the flavor of chicken breast unless it’s paired with something wonderful. I’ve discovered that chicken tastes delicious when paired with artichoke! If you love artichoke as much as I do, you really have to try this recipe. It’s amazing what a little artichoke and asparagus can do to jazz up plain chicken breasts!

For this recipe you’re going to need a skillet that you can transfer from the stove top to the oven. If you don’t have one, I highly recommend adding it to your kitchen collection. This Rachel Ray Sauté Pan from Amazon is pretty much exactly what I use, but cuter! It’s one of my favorite kitchen items! Begin by dicing your onion and garlic in the food processor. The artichokes will need to be cut into quarters, if they are not cut already. You’ll also want to have your asparagus cut into bite-sized pieces and ready to go. Go ahead and preheat that oven to 350 degrees.
Season your chicken breasts with garlic and onion powder. Then grab your skillet and put the stove on medium-high heat. Add your Ghee {or butter if you’re not worried about Whole30 compliance}. Add your onions and garlic. Cook until the onions are translucent, 2-3 minutes. Next, add your artichoke. Let the flavors simmer. Cook for about 2 more minutes.
You should be smelling some deliciousness by now. Add your chicken breasts. Sear for 4 minutes on each side. Finally, before placing the entire meal in the oven, add your cut asparagus.
Now comes the easy part. Bake in the oven for 30-35 minutes.

Baked Artichoke Chicken and Asparagus
Ingredients
- 1 tablespoon of Ghee {or butter}
- 1 Yellow Onion, diced
- 4 cloves of Garlic, diced
- 2 cups of Artichoke, cut in quarters
- 4 Chicken Breasts
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 lb. of Asparagus, diced into bite-sized pieces.
Instructions
- Pre heat oven to 350 degrees.
- Season chicken breasts with Garlic Powder and Onion Powder.
- In a skillet, heat up Ghee.
- Add diced onion and crushed garlic. Cook until onions are translucent, about 3 minutes.
- Add diced Artichoke to skillet. Cook for 2 minutes
- Place Chicken Breasts into skillet. Sear in Skillet for about 4 minutes on each side.
- Add cut Asparagus to skillet and then place the entire skillet in the oven to bake 30-35 minutes.
