Healthy Foil Dinners

The next part of our Healthy Camping Series includes an easy way to prepare dinner for the whole family when camping.  Bring along some charcoal and foil and you’re all set for some good ol’ healthy foil dinners.

I’ve always loved the outdoors.  Give me a tent and some firewood and I’ll rough it for a week.  I grew up camping every summer with my family in the beautiful Sawtooth Mountains.  River rafting, fishing, four wheeling, hiking, cliff jumping, hot springs, I love it all.  I’m pretty sure one of the main reasons my husband married me is because of our awesome family reunions every summer.  Since my husband decided to go back to school we haven’t made it up there and it’s killing us! No need to fear, he graduates this year so we will be making a comeback to the Stimpson reunion summer of 2016!

Beautiful day hike in UT. Perfect for adults and children 4+Lately camping for us has been roughing it in my parents home in Kanarraville, Utah for the weekend. (*wink)  They literally live right in front of one of the most beautiful day hikes in Southern Utah.  We spent last weekend there with some friends and took them on the Kanarraville Falls hike.  You walk in and out of the water the whole way so it’s fun for the kids and nice and refreshing.

If you go up the ladder in the narrows and keep hiking you eventually get to some natural water slides.  Here is a video I posted on Instagram last summer of me going down one.  The whole hike is so much fun! Here are some more pictures I took last summer on the hike.

Anyway, on with the healthy foil dinners.  I want to show you how easy it is to cook a healthy meal while camping.  I simply bought a bunch of veggies and precut and bagged them before the trip.  I also made it easy on myself by buying marinated chicken, beef, and frozen salmon.

I did three different meals for us all to share.  One salmon/onions/peppers/sweet potatoes, another chicken/squash, and the third beef/potatoes/carrots.  It’s also fun to let everyone do their own personal foil dinner.  Simply place all the fixings out for everyone to choose from to fill their foil packet.

Healthy Foil Dinners

Ingredients
  

  • Foil
  • Charcoal
  • Marinated Meat
  • Chopped Veggies pre-seasoned with salt and pepper

Instructions
 

  • Heat up your coals according to package directions.
  • Lay out 2 pieces of foil flat and place your veggies of choice on top.
  • Add marinated meat of choice to the veggies.
  • Place another two pieces of foil over the top and fold up. You want to form a pocket that won't leak.
  • Place on coals to cook. I cooked our meals for about 10 min on each side.
  • Open up and make sure food is cooked and enjoy!
