  • Vanilla protein powder

Substitution Ideas

Protein Powder:

  • Use any vanilla whey or baking protein powder you prefer. If using plant-based protein, you may need a few extra tablespoons of milk to achieve the right batter consistency.

Pancake Mix:

  • Any complete pancake mix will work. For extra fiber or a higher-protein option, try Kodiak Cakes or Birch Benders Protein Pancake Mix. I would suggest eliminating the protein powder if using a high protein pancake mix.

Equipment

Ingredients 

Pancakes:

  • 3 cups pancake mix
  • 3 scoops Clean Simple Eats Simply Vanilla protein powder, 99g
  • 1 cup plain nonfat Greek yogurt, 227g
  • 2 cups 2% milk
  • Zest of two oranges
  • Juice of two oranges, about ⅓ cup
  • 1 cup fresh cranberries, 100g
  • Orange slices, optional

Glaze:

  • 12 tablespoons powdered sugar, 90g
  • 2 tablespoons orange juice
  • 1 tablespoon milk
  • 1 scoop vanilla protein powder, 33g

Instructions 

  • Preheat oven to 350°F and lightly spray a ½ sheet pan (18×13) with cooking spray, or line with parchment paper.
  • In a mixing bowl, combine pancake mix, protein powder, Greek yogurt, milk, orange zest, and orange juice. Stir until just combined.
  • Pour the batter evenly into the prepared sheet pan.
  • Evenly sprinkle cranberries and optional orange slices on top.
  • Bake for about 25 minutes, or until the top is golden brown and the center appears cooked through.
  • In a small bowl, whisk together powdered sugar, orange juice, and milk. Slowly stir in the protein powder. Add additional milk as needed, 1 teaspoon at a time, until a thin icing forms.
  • Drizzle glaze over the pancakes, slice into portions, and serve warm.
