- 400 g Just Bare chicken nuggets, or any breaded chicken bites
- 1 cup liquid egg whites
- 4 ounces reduced-fat shredded cheese
- 4 thin flour tortillas
For the Sauce:
- ¼ cup plain nonfat Greek yogurt, 75g
- ½ tablespoon yellow mustard
- 2 tablespoons sugar-free BBQ sauce
- 1 tablespoon honey
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
Instructions
- Place the diced sweet potatoes in a microwave-safe dish with a few tablespoons of water. Cover loosely and microwave for 5–6 minutes, or until soft. Drain any excess water and set aside.
- Cook the chicken nuggets in the air fryer according to the package directions. Once cooked, dice into bite-sized pieces.
- Lightly scramble the egg whites over medium heat and season with salt and pepper. Remove from heat and set aside.
- In a small bowl, whisk together the Greek yogurt, mustard, BBQ sauce, honey, garlic powder, and onion powder until smooth.
- Lay out the tortillas and, for each one, spread about ¼ of the sauce evenly over the surface. Layer with ¼ of the sweet potatoes, ¼ of the diced chicken, ¼ of the scrambled eggs, and 1 ounce of cheese.
