MEAL PREP SUPPLIES USED

Half size sheet pan – This is the perfect size for 5, 4 cup glass bowls. You can, of course, use a full size sheet pan but your bowls will slide around a little bit more.

STORING INSTRUCTIONS

As with most of my meal prep recipes, you can let these cool, cover with a lid, and store in the fridge for up to 5 days for a quick meal ready to go!

REHEATING INSTRUCTIONS

These Beef Stroganoff Bowls can be reheated at any time! Just microwave them for 2-3 minutes when you’re ready to eat if you are packing these for work or on the go. They can also be reheated in the oven for 10 minutes at 350 degrees.

FREEZING INSTRUCTIONS

You can also freeze your Beef Stroganoff Bowls with the lids on them, just make sure to let them defrost before warming them up so that the bowls don’t crack.

Shredded Beef Substitutions

Ground Beef is a great substitute for the shredded beef if you already have some on hand that needs used. Approximately 20 ounces of lean, raw ground beef will yield very similar macros.

  1. Wide Pasta (like pappardelle or fettuccine): These hearty, broad noodles mimic egg noodles in texture and will hold the sauce well.
  2. Rice: A classic and gluten-free option, rice (especially white or jasmine rice) pairs wonderfully with beef stroganoff’s creamy sauce.
  3. Mashed Potatoes: For a comforting twist, you can serve the beef stroganoff over creamy mashed potatoes instead of noodles.

Beef Stroganoff Bowls

Ingredients 

  • 12 1/2 ounces Meal Prep Shredded Beef
  • 9 ounces egg noodles, uncooked
  • 2 ounces sliced mushrooms
  • 1 1/2 tablespoons butter, 21g
  • 2 tablespoons all purpose flour
  • 1 1/2 cups beef broth
  • 2 ounces 1/3 less fat cream cheese
  • 1/2 cup plain nonfat Greek yogurt, 113g
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper
  • 12 ounce bag frozen broccoli florets

Instructions 

  • Prepare Stay Fit Mom Meal Prep Shredded Beef
  • Cook egg noodles in salted water according to package directions. Strain and set aside.
  • Over medium-high heat, begin melting the butter. Add sliced mushrooms and cook until the mushrooms are browned and slightly soft. Whisk in the flour (it will be clumpy). Slowly whisk in all the beef broth (about 1/4 cup at a time). Add the salt, onion powder, and pepper.
  • Reduce heat to medium-low and let simmer for 5-10 minutes.
  • Remove from heat and stir in the cream cheese. Let cool for 20 minutes before stirring in the Greek yogurt. Or put the Greek yogurt in a bowl and slowly add the hot beef mixture until fully incorporated.
  • Microwave the broccoli according to package directions.
  • Get out 5 meal prep containers. To each container add 1/5 of the noodles (about 126g) 2 & 1/2 ounces shredded beef, 1/5 of the cooked broccoli, and 1/5 of the sauce (about 6 tablespoons or 90g).
  • Cover with lids and store in the refrigerator. Reheat in the microwave each day 2-3 minutes.

    Sooo I was short on time and money, and used seasoned ground beef for this instead. I’m not sure how it will differ in protein, but it’s still excellent! Yogurt and cream cheese work great instead of sour cream and heavy cream. I also doubled the mushrooms. Next time I’m going to try it with the recommended beef!

    This is SO good. As always, they deliver on flavour. I will make this just as a weeknight meal, or entertaining, let alone a meal prep. It’s nice the option for both is there.
    If you are a stroganoff lover, or just enjoy anything with noodles: don’t sleep on this recipe. Top notch meal right here.

  3. I think you need to amend/correct equipment to read “Five (5) 4cup glass bowls”. As it reads now it sounds like you need Four (4) 1cup glass bowls. Something to consider
