Cook egg noodles in salted water according to package directions. Strain and set aside.
Over medium-high heat, begin melting the butter. Add sliced mushrooms and cook until the mushrooms are browned and slightly soft. Whisk in the flour (it will be clumpy). Slowly whisk in all the beef broth (about 1/4 cup at a time). Add the salt, onion powder, and pepper.
Reduce heat to medium-low and let simmer for 5-10 minutes.
Remove from heat and stir in the cream cheese. Let cool for 20 minutes before stirring in the Greek yogurt. Or put the Greek yogurt in a bowl and slowly add the hot beef mixture until fully incorporated.
Microwave the broccoli according to package directions.
Get out 5 meal prep containers. To each container add 1/5 of the noodles (about 126g) 2 & 1/2 ounces shredded beef, 1/5 of the cooked broccoli, and 1/5 of the sauce (about 6 tablespoons or 90g).
Cover with lids and store in the refrigerator. Reheat in the microwave each day 2-3 minutes.
