My family is OBSESSED with these chicken chunks, so adding them to a breakfast meal prep was pretty much guaranteed to be a hit. Each bowl is loaded with crispy chicken chunks, hash browns, shredded sweet potato, eggs, egg whites, and cheese, then baked right in the same glass meal prep bowl you’ll store, reheat, and eat it out of.
And these are filling! Each bowl has 46 grams of protein plus plenty of carbs from the potatoes to make this a great grab-and-go breakfast for busy mornings, hungry teenagers, or anyone who wants something a little more substantial than your typical egg meal prep.

What’s in Chicken Chunk Scramble Bowls?
Just Bare Chicken Chunks
These are the reason my family loves this meal prep so much.
We use Just Bare Chicken Breast Chunks, cook them in the air fryer until they’re hot and crispy, and then divide them among the bowls before baking.
You could substitute another brand of breaded chicken chunks or bites, but keep in mind that changing brands can change the calories and macros.
Eggs & Egg Whites
Using a combination of whole eggs and liquid egg whites gives us the best of both worlds.
The whole eggs add flavor and richness while the egg whites make it easy to increase the protein without adding a ton of extra calories and fat.
Each batch uses 5 whole eggs and 2½ cups of liquid egg whites, giving you plenty of protein in every bowl.
Hash Browns
I use Hungry Jack dehydrated hash brown potatoes for this recipe. Prepare them according to the package directions to rehydrate the potatoes, but there’s no need to pan-fry them first.
They’ll finish cooking right along with everything else in the oven.
Shredded Sweet Potato
In addition to the hash browns, each bowl gets freshly grated sweet potato.
I love the combination of the two potatoes here. The sweet potato adds a little sweetness, color, fiber, and another source of carbohydrates to make these bowls even more filling.
Grating the sweet potato also allows it to cook right in the egg mixture without needing to precook it.
Reduced-Fat Cheese
Each bowl gets an ounce of reduced-fat shredded cheese on top before going into the oven.
Cheddar is an obvious choice, but a Mexican blend, Colby Jack, or pepper Jack would all be delicious too. Just remember that substitutions can change the listed macros.

The Best Part: Bake Them Right in Your Meal Prep Bowls
This might be my favorite thing about this recipe.
Instead of baking everything in a big casserole dish and then cutting it up and transferring it into meal prep containers, we bake each serving directly in an oven-safe glass bowl.
Set all five bowls on a sheet pan, fill them, bake them, let them cool, and put the lids on.
That’s it.
No casserole dish to wash. No cutting equal portions. No transferring breakfast from one dish to another.
When you’re ready to eat, grab a bowl from the refrigerator, remove the lid, microwave it, and breakfast is ready.
Any meal prep that also saves me dishes gets bonus points around here.
A High-Protein Breakfast That Actually Keeps You Full
These aren’t tiny little egg cups pretending to be breakfast.

Perfect for Breakfast Meal Prep
This recipe makes 5 individual bowls, which means you can knock out five breakfasts in one batch.
Once the bowls have finished baking, allow them to cool before putting on the lids and transferring them to the refrigerator.
Store the Chicken Chunk Scramble Bowls in the refrigerator for up to 4 days.
When you’re ready to eat, remove the lid and microwave for approximately 2–3 minutes, or until heated through.
Make Them Your Own
One of the nice things about breakfast bowls is how easy they are to customize.
Try adding:
- Diced bell peppers
- Green chiles
- Jalapeños
- Chopped spinach
- Diced onions
- Salsa
- Hot sauce
- Avocado
- Fresh cilantro
- Extra chives
I would add fresh toppings like avocado or salsa after reheating rather than baking them with the bowls.
And if you’re tracking macros, remember to account for any additional toppings or ingredient substitutions.

Can I Use a Different Chicken?
Absolutely.
We use Just Bare Chicken Breast Chunks because they’re a family favorite around here and they’re what I used to calculate the macros for this recipe.
Another brand of breaded chicken breast chunks or nuggets should work just fine. Cook them according to the package directions before adding them to the bowls.
If you switch brands, you’ll want to recalculate the nutrition information if you’re tracking your macros closely.
Can I Use Frozen Hash Browns?
Yes, although the amount and nutrition may differ from the Hungry Jack dehydrated potatoes used in the original recipe.
If using frozen shredded hash browns, I’d thaw them first and remove any excess moisture before dividing them among the bowls.
Do I Need to Cook the Sweet Potato First?
No! That’s why we grate it.
Finely shredding the raw sweet potato helps it cook through while the scramble bowls are baking. There’s no need to roast or microwave it first.
What Size Glass Bowls Should I Use?
Use individual oven-safe glass meal prep containers with enough room for the eggs to cook without overflowing.
Make sure your specific containers are rated for oven use before baking in them, and follow the manufacturer’s recommendations regarding temperature changes and oven safety.

Chicken Chunk Scramble Bowls
Ingredients
- 15 ounces Just Bare Chicken Breast Chunks
- 1 medium sweet potato, 350g, peeled and grated
- 2½ cups prepared hash browns, I use Hungry Jack dehydrated hash brown potatoes
- 5 large eggs
- 2½ cups liquid egg whites
- 5 ounces reduced-fat shredded cheese
- 1 teaspoon salt
- ¼ teaspoon garlic powder
- ¼ teaspoon black pepper
- Chopped chives, for garnish
- Cooking spray
Instructions
- Preheat oven to 375°F. Arrange 5 oven-safe glass meal prep containers on a baking sheet and lightly coat each with cooking spray.
- Prepare the hash browns according to package directions to rehydrate them. Do not pan-fry.
- Cook the chicken chunks in the air fryer at 375°F for 12–15 minutes, or until heated through and crispy.
- Peel and grate the sweet potato using a box or cheese grater.
- Evenly divide the prepared hash browns, chicken chunks, and grated sweet potato among the 5 containers.
- In a large mixing bowl, whisk together the eggs, egg whites, salt, garlic powder, and black pepper. Divide the egg mixture evenly among the 5 containers.
- Top each bowl with 1 ounce of shredded cheese.
- Bake for 35–40 minutes, or until the eggs are completely set in the center.
- Garnish with chopped chives, if desired. Allow the bowls to cool before covering with lids and refrigerating.
- To reheat, microwave uncovered for 2–3 minutes, or until heated through.
