The salsa and cream cheese create a creamy, flavorful sauce while the chicken stays tender and juicy. Finish everything with melted Mexican cheese, and you’ve got a comforting meal that’s packed with protein and perfect for busy weekdays.

Ingredients

You’ll only need a handful of simple ingredients:

  • Boneless, skinless chicken breast
  • Basmati rice
  • Chicken broth
  • Reduced-fat cream cheese
  • Salsa
  • Reduced-fat Mexican cheese
  • Salt and pepper

Substitutions

This recipe is very forgiving, making it easy to use what you already have on hand.

  • Basmati rice: Quinoa or orzo pasta both work great in place of the rice. They’ll cook beautifully right in the bowl and are a fun way to change up the recipe.
  • Salsa: Use mild, medium, hot, or even salsa verde depending on your family’s preferences.
  • Cheese: Reduced-fat Mexican cheese can be swapped for cheddar, Monterey Jack, pepper jack, or a Mexican blend.
  • Cream cheese: Regular cream cheese works just as well if that’s what you have available.
  • Chicken: Boneless, skinless chicken thighs can be substituted if you prefer dark meat. Just note that the nutrition information will change slightly.

I especially like mentioning quinoa and orzo because it makes this recipe feel more versatile without changing the simplicity of the one-bowl meal.

Variations

This recipe is easy to make your own!

  • Swap the salsa for salsa verde.
  • Use pepper jack cheese for a little extra spice.
  • Add black beans or corn for additional fiber and flavor.

Tips for Success

  • Use your favorite salsa to customize the flavor. Mild, medium, or hot all work well.
  • If your rice isn’t quite tender after baking, simply add a splash of chicken broth, cover loosely with foil, and bake for another 5–10 minutes. Every oven cooks a little differently.
  • After reheating, stir everything together so the cream cheese melts into the rice for the creamiest texture.
  • Top with fresh cilantro, green onions, avocado, or crushed tortilla chips if serving immediately.

How to Freeze

These bowls freeze beautifully, making them perfect for stocking your freezer with ready-to-go meals.

Once the bowls have cooled completely, cover them with airtight lids and freeze for up to 3 months.

When you’re ready to enjoy one, transfer it to the refrigerator the night before to thaw, or let it sit on the counter for 20–30 minutes before reheating.

Important: If you’re using glass meal prep containers, always allow them to thaw or come closer to room temperature before microwaving. Placing a frozen glass container directly into the microwave can cause it to crack from the sudden temperature change.

Reheating Instructions

Microwave for 2–3 minutes, stirring halfway through, until heated all the way through.

If reheating from frozen, it’s best to thaw the bowl in the refrigerator overnight first for the best texture and even heating.

These Salsa Chicken Bakes are an easy, high-protein meal prep packed with tender chicken, rice, salsa, cream cheese, and melted Mexican cheese. Baked all in one dish, they're a flavorful, make-ahead lunch or dinner.

Ingredients 

  • 25 ounces boneless, skinless chicken breast
  • 10 tablespoons basmati rice
  • 1 1/4 cups chicken broth
  • 10 tablespoons 1/3 less fat cream cheese
  • 1 1/4 cups salsa, I used Pace
  • 5 ounces reduced fat Mexican cheese
  • salt & pepper

Instructions 

  • Preheat the oven to 350 degrees and arrange 5 oven safe containers on a cookie sheet.
  • Salt and pepper chicken on both sides. You can additionally season your chicken with your favorite fajita or taco blend if preferred.
  • To each bowl add 2 tablespoons rice, pinch of salt, 1/4 cup broth, 5 ounces chicken, 2 tablespoons cream cheese, 1/4 cup salsa, and 1 ounce cheese.
  • Bake about 35-40 minutes, or until the rice is cooked.
  • Let cool before covering with lids and placing in the refrigerator. Reheat in the microwave for 2-3 minutes.
