Supplies Used
Wireless Meat Thermometer– Use a meat thermometer for best results when cooking meat. Every air fryer is a little different and you want to be sure your chicken is heated to 165 degrees. I keep this one in my drawer by the air fryer.

Lemon Pepper Chicken Skewers
Equipment
Ingredients
For the Chicken:
- 2 pounds chicken thighs
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic
- 1 tablespoon lemon zest
- 1/4 teaspoon paprika
For the Lemon Butter Sauce:
- 1.5 tablespoons butter, slightly melted
- 1/2 teaspoon pepper
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 1/4 teaspoon paprika
- 1/4 teaspoon sugar
Instructions
- In a small mixing bowl combine all the spices for the chicken.
- Cut chicken thighs into 1″ cubes and coat with the spices. Load 6, 6 inch skewers with about 5 ounces of chicken each.
- Place in the air fry 12 minutes at 400 degrees.
- Mix butter sauce ingredients in a small mixing bowl. When chicken skewers are done coat them generously with the butter sauce. Serve immediately.



Absolutely delicious! I used 2lbs of tenders though, instead of thighs… it’s what I had! Also, tossed them in a little Canola oil after seasoning them and threw them on the grill for 20 or so minutes at 400. Definitely a “make again” in the family book!
