Ingredients You’ll Need

One of my favorite things about this recipe is how simple the ingredients are. You don’t need anything fancy to make a really flavorful sauce!

  • Beef chuck roast: I use 2 pounds of beef chuck roast, trimmed of excess fat and thinly sliced. You can also use another lean roast.
  • Beef broth: Adds flavor and helps keep the beef tender while cooking. Water works too!
  • Soy sauce: Gives the sauce that classic salty, savory flavor. You can use a reduced-sodium version if preferred.
  • Brown sugar: Adds just enough sweetness to balance out the soy sauce.
  • Sesame oil: A little goes a long way in giving this dish that delicious Asian-inspired flavor.
  • Garlic: Fresh minced garlic adds so much flavor.
  • Cornstarch: Helps thicken the sauce so it coats the beef and broccoli. Arrowroot powder works too.
  • Broccoli florets: Fresh broccoli adds color, fiber, and volume to each serving.

How to Make Slow Cooker Beef & Broccoli

This is one of those recipes that requires very little hands-on work, making it perfect for a busy day.

  1. Prep the beef. Slice the roast into thin, ¼-inch pieces, trimming away any excess fat.
  2. Mix the sauce. Add the beef broth, soy sauce, brown sugar, sesame oil, and minced garlic to the bottom of your slow cooker.
  3. Add the beef. Stir the sliced beef into the sauce until evenly coated.
  4. Cook until tender. Cover and cook on low for 5 hours or high for 2½ hours.
  5. Thicken the sauce. Whisk the cornstarch with ¼ cup water and stir it into the slow cooker.
  6. Add the broccoli. Cover and cook for 30 minutes, stir to coat the broccoli in the sauce, and cook for another 30 minutes or until tender.
  7. Serve and enjoy! Portion into meal prep containers with your favorite rice or additional vegetables.

Pressure Cooker Instructions

Short on time? You can also make this recipe in your Instant Pot!

Start by using the Sauté function to sear the beef in sesame oil for a few minutes. Add the broth, soy sauce, brown sugar, and garlic, then pressure cook on high for 10 minutes.

Allow the pressure to release naturally for 10 minutes before releasing any remaining pressure. Stir in your cornstarch slurry using Sauté mode until the sauce thickens. Finally, add the broccoli and let it cook on Keep Warm for 5–10 minutes, until crisp-tender.

You’ll have a delicious, protein-packed meal without waiting on the slow cooker!

Tips for the Best Beef & Broccoli

Slice your beef thin. Cutting the roast into thin, even slices helps it cook evenly and makes every bite tender. If you’re having trouble slicing it, try placing the beef in the freezer for 20–30 minutes first.

Don’t add the broccoli too early. Adding the broccoli toward the end of cooking keeps it from becoming overly soft or mushy.

Adjust the sauce thickness. If you prefer a thicker sauce, let it cook a little longer after adding the cornstarch slurry.

Use fresh or frozen broccoli. Fresh broccoli works great, but frozen can work in a pinch. Since frozen broccoli is partially cooked during processing, you may need to reduce the cooking time to prevent it from getting mushy.

How to Meal Prep Beef & Broccoli

This recipe makes approximately 6½ servings, making it a great option for preparing several lunches or dinners at once.

I love serving this beef and broccoli over white rice for an easy, balanced meal. You can also use brown rice, cauliflower rice, or add extra vegetables depending on your calorie and macro needs.

Divide the beef and broccoli into individual meal prep containers, add your preferred sides, and you’ve got meals ready to grab throughout the week!

Storage and Reheating

Store your beef and broccoli in airtight containers in the refrigerator for up to 3–4 days.

When you’re ready to eat, simply microwave for 2–3 minutes, or until heated through. Add a splash of water if the sauce has thickened too much in the refrigerator.

You can also freeze individual portions for longer storage, although the broccoli may soften a bit after thawing.

Ingredients

  • 2 lb beef chuck roast, or any lean roast
  • 1 cup beef broth or water
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 4 tablespoons cornstarch or arrowroot powder
  • ¼ cup water
  • 20 oz broccoli florets

Instructions

Slow Cooker

  • Slice the roast into thin ¼” pieces, trimming off any excess fat.
  • In the bottom of the slow cooker, combine the broth, soy sauce, brown sugar, sesame oil, and garlic.
  • Add the beef slices and stir to coat evenly.
  • Cover and cook on low for 5 hours or high for 2½ hours, until the beef is tender.
  • Whisk together the cornstarch and ¼ cup water to make a slurry. Pour over the cooked beef and stir gently.
  • Add the broccoli florets, cover, and cook for 30 minutes. Stir the broccoli to coat it in the sauce, then cover and cook another 30 minutes, or until the broccoli is tender.
  • Pack with rice or extra veggies for a complete meal.
  • Store in airtight containers and reheat in the microwave for 2–3 minutes before serving.

Pressure Cooker

  • Slice the roast into thin ¼” pieces, trimming off any excess fat.
  • Set the pressure cooker to Sauté mode. Add the sesame oil and sear the beef for 2–3 minutes to enhance flavor (optional but recommended).
  • Add the broth, soy sauce, brown sugar, and garlic. Stir to combine, making sure no bits stick to the bottom of the pot.
  • Seal the lid and cook on high pressure for 10 minutes. Allow a natural release for 10 minutes, then quick-release any remaining pressure.
  • In a small bowl, whisk together the cornstarch and ¼ cup water to make a slurry. Turn the cooker back to Sauté mode and stir in the slurry. Simmer for 2–3 minutes, until the sauce thickens.
  • Add the broccoli florets directly to the pot, cover (but don’t seal), and let sit on Keep Warm mode for 5–10 minutes, or until the broccoli is crisp-tender.
  • Serve over rice or pack with extra veggies for a balanced meal.
  • Store in airtight containers and reheat in the microwave for 2–3 minutes before serving.
