Strawberry Poppyseed Salad
Ingredients
- For the salad
- 8 ounces spinach
- 10 ounces strawberries
- 1/2 cup candied pecans, chopped (Trader Joes)
- 1/2 small onion, sliced (50g)
- 3 ounces fat free feta cheese, Trader Joe’s
- For the dressing
- 1/4 cup balsamic vinegar
- 3 tablespoons EVOO
- 1 &1/2 tablespoons poppyseeds
- 1 & 1/2 tablespoons honey
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Instructions
- Toss your salad ingredients in a medium size bowl.
- Mix all your dressing ingredients well and drizzle over the salad when ready to eat.
- Enjoy!
