How Jenifer Lost 10 Pounds While Managing Lupus, Travel, and Two Jobs

When Jenifer first joined Stay Fit Mom years ago, she learned the foundations of macro counting and built habits that stayed with her long after coaching ended. But after navigating chronic health conditions, a demanding schedule with two jobs, and frequent work travel, she realized something important: accountability was the missing piece.

Since returning to coaching in February 2026, Jenifer has lost 10 pounds, gained confidence, and found a sustainable routine that works in real life—not just when life is convenient. Even while managing lupus, Sjögren’s syndrome, spinal arthritis, and a busy travel schedule, she’s proven that lasting progress doesn’t come from chasing the next diet. It comes from building habits, staying consistent, and having a coach in your corner.

Tell us a little bit about your story. Work? family?

Jen: I am 49 years old and I married my highschool sweetheart 29 years ago when we were just 20 and I absolutely love the life we have created together. We have a 23 year old son who amazes me every day with how strong and independent he is. He moved across the country at 18 years old to go to college and has found a life of his own in Indiana after he graduated from Purdue last year. I just sit back and watch him and all he’s accomplished so far, knowing he’s just starting to find his own way and think, we must have done something right. 

We moved from Las Vegas, Nevada to Pocatello, Idaho in 2015 for my husband’s job and I had the opportunity to go to work at the same company my husband works for and have been there for almost 12 years. People ask all the time how my husband and I manage since we spend almost every waking moment together, but for us it’s just normal now. He’s my best friend and my biggest supporter and I wouldn’t have it any other way. This last year I had the chance to work with a close friend helping her with the catering business at her restaurant in Pocatello. I jumped at the chance because event planning and catering is my passion, my background and where my heart is. It has been so amazing and I love every minute of it! I am super busy with two jobs but am so lucky to be able to do both jobs. 

How did you find Stay Fit Mom and what made you decide to take the leap?

Jen: I started following Stay Fit Mom sometime before 2020 when I signed up for my first coaching session with them. I had great success back then and loved everything about the program. I learned so much and it gave me a foundation that I have followed since then with macros even when I wasn’t doing coaching. I re-signed up for coaching in February 2026 after getting my health under control for a couple of years and realizing I thrive on and need the accountability of checking in with a coach.

Your transformation is inspiring! Tell us how much weight/inches you’ve lost.

Jen: Since February 2026 when I signed back up I have lost 10 pounds. I am not sure how many inches, but I can tell you I have had to buy new clothes which was an amazing feeling!

What diets/things have you tried before and how does it compare to the macro counting journey you’ve been on with Stay Fit Mom?

Jen: I have tried pretty much everything over the years. I did Weight Watchers, Atkins, Keto, Nutri Systems just to name a few. Some worked short term, some not at all. Once I learned macro counting and saw results that lasted I knew that was the best way for me to get to my goals. I just needed to stick with it and I could accomplish anything I wanted to.

How are you able to fit in Macro counting with your lifestyle? Have you had to make any major changes?

Jen: I am lucky in that my husband also counts macros so it’s easier for me to stick to my plan as he’s also sticking to a plan. We travel every other week for work to another office my husband manages in Idaho. The first year we were doing that we were eating out for lunch and dinner and while it was yummy and fun to try new restaurants, we quickly realized that was not going to be good for us long term. So I meal prep on the weeks we travel for work. I make sure we have breakfast. lunch and snacks for those days that we can warm up and eat at the office and we eat out at Costa Vida two nights when we are in Boise. We can easily track Costa Vida and we enjoy the “treat” of eating out. Plus we can walk there so we get some steps in too! On the weeks we are home, I meal prep breakfast and then plan our dinners out making sure we have leftovers for lunch. We don’t eat out a lot when we are home, maybe once a week on a weekend night but not always. Even when we travel for personal reasons we pack a cooler and a bag of snacks that help keep us on track and we end up spending less money not eating out all our meals.

How has learning to macro count shifted your thinking about “dieting”?

Jen: I don’t ever feel like I am dieting anymore. It has become such a habit to track and count my macros. I do it to some extent even when I’m on vacation because I feel off when I’m not logging my food and it helps me see that just letting go and eating whatever comes my way actually looks like macro wise. It reminds me that I need to prioritize protein because eating out on vacation a lot ends up being mostly fat and carbs if you’re not careful. I have learned it’s okay to enjoy myself on vacation in moderation but to be mindful and to get right back on track when I’m home.

Besides shedding pounds and inches, what are some Non-Scale Victories that you’ve experienced?

Jen: I have a number of health issues that include spinal arthritis, lupus and sjogrens disease. It took several years for me to learn what works and what doesn’t with those issues. I deal with daily pain and inflammation and have learned that by eating healthy and balanced I feel so much better, I have less pain even though it never goes away entirely. I have bought new clothes, I have been able to do more physically when I workout and my mental health has improved a lot as I learn to give myself grace on the off days or weeks by still checking in and taking pictures because most of the time it wasn’t as bad as I thought it was.

What’s your most used, favorite SFM recipe?

Jen: Most recently we have been loving the Cinnamon Roll Pancake Bowl. I make it in a 9×13 pan and then divide it into 5 servings and my husband and I share a serving for a morning snack with some butter and sugar free syrup. I feel like I’m getting the best treat everyday! We also regularly make the Chicken Parmesan Meatballs Bowls, Korean Ground Turkey and recently added the Chili Cheese Sweet Potato Bowls, they are sooo good!!

Tell us about your experience working with Coach Cassie specifically.

Jen: When I signed back up I answered all the questions and when it came to if I had a coach preference I thought to myself, I would love someone who might understand my health issues. I left that choice to SFM and when they told me Cassie was available and willing to take me, I could not have been more excited! I have been following Krista for years and by default get to follow Cassie since they are sisters. I really felt like I had hit the jackpot with Cassie. She understands my health and can relate in so many ways. She always makes me feel amazing about my progress, supports me if I am having an off week and encourages me to keep doing what I’m doing. Having her to check in with has kept me accountable and she makes me smile every week with her enthusiasm and confidence in me.

I am so thankful for the SFM community even when I wasn’t doing coaching. I have followed along, done the challenges and felt like part of a community of amazing, strong, beautiful women who want to help and teach and support other women. There are alot of programs and people out there but none of them hold a candle to what SFM offers and does. I will be a lifelong fan and can’t wait to see where this community goes and what I can accomplish by being part of it!
