This Pulled Pork Chili is an old Stay Fit Mom favorite from our Meal Prep Cookbook Volume 3, and it’s finally making its way to the website! It’s hearty, filling, packed with protein and fiber, and makes a BIG batch, which is exactly why it’s been one of our go-to meal prep recipes for years.

Tender shredded pork is simmered with tomatoes, chili beans, corn, peppers, and plenty of spices, with a little BBQ sauce and brown sugar to give the chili the perfect sweet and smoky flavor.

Serve it for an easy family dinner, portion it out for lunches all week, or freeze half for another day. One batch makes 15 servings (1 cup servings), so you have plenty to work with.

What’s in Pulled Pork Chili?

Pork Loin

Boneless pork loin keeps this chili lean while still giving you tender, flavorful shredded pork. Cutting it into smaller pieces before cooking also helps it cook evenly and makes it easy to shred.

Chili Beans

Using canned chili beans keeps this recipe simple while adding carbohydrates, fiber, and additional protein. Since they’re already seasoned, they also add another layer of flavor to the chili.

Tomatoes

A combination of tomato sauce and diced tomatoes creates the thick, hearty base for the chili.

Red Bell Pepper, Onion & Corn

Red bell pepper and onion add plenty of savory flavor, while the corn adds a little sweetness and texture.

BBQ Sauce & Brown Sugar

These are what make this pulled pork chili a little different from a traditional chili. BBQ sauce and just enough brown sugar give it a subtle sweet and smoky flavor that works perfectly with the pork.

Seasonings

Garlic powder, chili powder, cumin, cayenne, salt, and pepper keep the ingredient list simple while giving the chili plenty of flavor. You can easily adjust the cayenne depending on how much heat your family likes.

Pressure Cooker or Slow Cooker

One of my favorite things about this recipe is that you can make it either way.

The pressure cooker is perfect when you want to get dinner or meal prep done faster. Searing the seasoned pork first adds extra flavor before everything cooks together under pressure.

If you prefer the slow cooker, you can sear the pork in a separate skillet first or skip that step altogether when you’re short on time. Add everything to your slow cooker and let it cook until the pork is tender enough to easily shred.

Either way, you’ll remove the cooked pork, shred it, and stir it back into the chili before serving.

Perfect for High-Protein Meal Prep

This recipe was originally created for one of our meal prep cookbooks, so naturally it works REALLY well for meal prep.

One batch makes 15 one-cup servings, which means you can prep several lunches at once and still have plenty left for dinner or the freezer.

Divide the finished chili into individual meal prep containers and refrigerate. When you’re ready to eat, microwave a serving for about 2–3 minutes, or until heated through.

And at just 175 calories with 17.2 grams of protein and 5.2 grams of fiber per cup, you have plenty of room to add your favorite toppings or sides depending on your macros.

What to Serve With Pulled Pork Chili

This chili is hearty enough to eat completely on its own, but it’s also great topped with:

  • Shredded cheese
  • Plain Greek yogurt or sour cream
  • Diced avocado
  • Green onions
  • Cilantro
  • Jalapeños
  • Crushed tortilla chips

For dinner, pair it with cornbread, tortilla chips, or a simple side salad. If you’re meal prepping, you can also add rice or extra corn to your container when you need more carbs.

How to Freeze Pulled Pork Chili

This is a great recipe to make now and save for later, especially since the recipe makes such a large batch.

Allow the chili to cool completely before transferring it to freezer-safe containers or bags. You can freeze it in individual one-cup portions for easy lunches or in a larger container to use for a future family dinner.

Freeze for up to 3 months. Thaw overnight in the refrigerator and reheat on the stovetop or in the microwave until hot.

Meal prep tip: If you don’t need all 15 servings at once, enjoy some for dinner, portion several servings for lunches that week, and immediately freeze the rest. Future you will be very happy you did!

Easy Variations

  • Make it spicier: Add extra cayenne, diced jalapeños, or your favorite hot sauce.
  • Make it milder: Reduce or omit the cayenne pepper.

Pulled Pork Chili

This Pulled Pork Chili recipe is an easy, high-protein dinner or meal prep made with tender shredded pork loin, chili beans, tomatoes, corn, peppers, and a sweet and smoky BBQ-inspired sauce. Make it in the pressure cooker or slow cooker for a hearty, freezer-friendly meal with 17g of protein and 5g of fiber per serving.

Ingredients 

  • 2 pounds boneless pork loin
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon olive oil
  • 1 small red pnion, diced
  • 1 red bell pepper, diced
  • 1 cup corn, 170g (canned or frozen)
  • 1 cup beef broth
  • 28 ounce can tomato sauce
  • 28 ounce can diced tomatoes
  • 2 cans chili beans, 28oz.
  • 1/2 cup BBQ sauce
  • 2 tablespoons brown sugar

Instructions 

  • Slice pork loin up into 1″- 2″ pieces. Trim off any excess fat.
  • In a small mixing bowl combine all the seasonings. Season the pork well on all sides. If you have some extra seasoning thats ok, set it aside for later.
  • Turn your pressure cooker on to sauté. Heat up the olive and sear the pork on all sides. If using a slow cooker do this in a pan over the stove, or skip the sauté step.
  • Remove pork from the pot and use some of the broth, or a little vinegar, to remove cooked spices stuck to the bottom of the pot.
  • Add all remaining ingredients to the pressure cooker or slow cooker and stir well. Add the pork pieces back in the pot and set to pressure high for 40 minutes. Slow cook on high 4-6 hours or low 6-8 hours. You can quick or natural release the pressure when done.
  • Remove the pork pieces and shred. Stir pork back into the soup and serve or pack up for meal prep.
  • Reheat in the microwave 2-3 minutes.
