Garlic Smashed Potatoes
Equipment
Ingredients
- 2 pounds mini potatoes
- 1 tablespoon avocado oil spray, 14g (or any spray oil)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Place potatoes in a pot of water and boil about 20 minutes or until soft. Poke potatoes with a fork to see if they are soft.
- Preheat the oven to 425 degrees and line a full sheet pan (26X18) or two half sheets with parchment paper or foil.
- Place potatoes on the sheet pan and smush with the bottom of a jar or two forks. For larger potatoes, slice in half first before smashing.
- Sprinkle with the spices. I recommend measuring with your heart here.
- Spray with about 14g of avocado oil, or drizzle 1 tablespoon over them all.
- Bake 45-50 minutes or until the potatoes are nice and crispy. Enjoy!
