Garlic Smashed Potatoes
Mini potatoes smashed and roasted to crispy perfection and seasoned just right. The perfect side to so many dishes!

Ingredients

mini potatoes

avocado oil spray
14g (or any spray oil)

garlic powder
1/4
teaspoon
salt

pepper
Instructions
Place potatoes in a pot of water and boil about 20 minutes or until soft. Poke potatoes with a fork to see if they are soft.
Preheat the oven to 425 degrees and line a full sheet pan (26X18) or two half sheets with parchment paper or foil.
Place potatoes on the sheet pan and smush with the bottom of a jar or two forks. For larger potatoes, slice in half first before smashing.
Sprinkle with the spices. I recommend measuring with your heart here.
Spray with about 14g of avocado oil, or drizzle 1 tablespoon over them all.
Bake 45-50 minutes or until the potatoes are nice and crispy. Enjoy!
