Meat Lovers Breakfast Burritos

Equipment

Ingredients 

  • 126 g raw sweet potatoes, 1/2 medium uncooked
  • 70 g breakfast turkey sausage
  • 70 g bacon, diced (about 2 slices)
  • 35 g ounces diced ham
  • 1 cup liquid egg whites
  • 2 ounces Mexican cheese blend
  • 4 uncooked flour tortillas, 3p/23c/4f per tortilla

Instructions 

  • Dice up your sweet potatoes and place in a microwave safe container with a little bit of water (1-2 tablespoons). Microwave about 5 minutes or until potatoes are soft. Air fry another 5 minutes at 350 degrees to make them crispy.
  • Over medium heat, cook your sausage and bacon until no longer pink. Remove from heat and drain any excess grease.
  • Return to heat and add the egg whites, ham, and potatoes. Cook until eggs are done.
  • Evenly distribute the mixture onto your 4 tortillas.
  • Evenly top each burrito with some of the cheese.
  • Fold in edges and roll up your burritos.
  • Place in your air fryer at 350 degrees for 7 minutes, or cook them on the stove, turning until all sides are golden brown. Let the burritos cool completely before refrigerating or freezing. Reheat in the microwave or air fryer.
