400gJust Bare chicken nuggetsor any breaded chicken bites
1cupliquid egg whites
4ouncesreduced-fat shredded cheese
4thin flour tortillas
For the Sauce:
¼cupplain nonfat Greek yogurt75g
½tablespoonyellow mustard
2tablespoonssugar-free BBQ sauce
1tablespoonhoney
¼teaspoongarlic powder
¼teaspoononion powder
Instructions
Place the diced sweet potatoes in a microwave-safe dish with a few tablespoons of water. Cover loosely and microwave for 5–6 minutes, or until soft. Drain any excess water and set aside.
Cook the chicken nuggets in the air fryer according to the package directions. Once cooked, dice into bite-sized pieces.
Lightly scramble the egg whites over medium heat and season with salt and pepper. Remove from heat and set aside.
In a small bowl, whisk together the Greek yogurt, mustard, BBQ sauce, honey, garlic powder, and onion powder until smooth.
Lay out the tortillas and, for each one, spread about ¼ of the sauce evenly over the surface. Layer with ¼ of the sweet potatoes, ¼ of the diced chicken, ¼ of the scrambled eggs, and 1 ounce of cheese.
Roll each tortilla tightly into a burrito. Wrap in foil or parchment paper and store in an airtight container.
When ready to eat, air fry at 350°F for 5–7 minutes or microwave for 60–90 seconds until heated through.
