Crispy Bean & Cheese Burritos

I just love when I can take a fast food favorite and make it a little bit healthier by recreating it at home and knowing exactly what I’m putting into it. These Crispy Bean & Cheese Burritos are fast, easy, and everyone loves them! I love using my homemade pinto bean recipe in these burritos, they are just so good and really level them up! Throw them together for a quick weeknight meal or meal prep them ahead of time for a meal later on. Either way they are delicious!

Ingredients
- Uncooked flour tortillas
- Stay Fit Mom pinto beans (or canned refried beans)
- Reduced fat Mexican cheese blend
- Queso cheese
- Hot sauce – optional (We like the mild Taco Bell sauce)
You can make your own pinto beans in the Instant Pot by checking out this post. They are so easy and yummy! We actually prefer these over canned, but those work great in a pinch!

You can find uncooked flour tortillas at most grocery stores now. I usually use Tortilla Land or Tortilla Fresca and they both have very similar macros. Look for any close to: 3p/23c/4f per tortilla.

Supplies Used
- Air Fryer – We love using our Air Fryer for so many things, and it’s perfect for these burritos!
Storing Instructions
Make sure to let your burritos cool COMPLETELY before storing in an airtight container or bag. If you do not, there will be too much moisture and the tortillas will get soggy.
Freezing Instructions
Let the burritos cool completely and wrap individually with a layer of each cling wrap and some foil.
Reheating Instructions
If you want these to be nice and crispy again, reheat in the air fryer at a lower temp so the inside gets heated through. Every air fryer is slightly different but I have found that 300º for about 8 minutes does the trick. Another option is to microwave them 1 minute to get the inside warm, and then air fry at 350º for about 5 minutes.

Crispy Bean & Cheese Burritos
Equipment
Ingredients
- 4 uncooked flour tortillas
- 2 cups Stay Fit Mom pinto beans, 512g or canned refried beans
- 4 ounces reduced fat Mexican cheese blend
- 4 tablespoons queso cheese, 28g
- 1 tablespoon hot sauce, optional (We like the mild Taco Bell sauce)
Instructions
- If using hot sauce, mix it into the pinto beans. Scoop 1/2 cup of the pinto beans, 1/4 cup Mexican cheese, and 1 tablespoon queso into each uncooked tortilla.
- Roll up the tortilla, folding in the sides first.
- Cook in the air fryer at 350 degrees for 7 minutes. Flip and cook another 2–3 minutes if needed. Let them cool before eating.

Can I cook these in a traditional oven, vs the air fryer? If so, do you have recommendations on how I might do that? Many thanks!
You can yes, but I would just do them in a pan on the stove before I’d bake them. Just to crisp up the uncooked tortillas on all sides.

This is on my list to make! But just checking do you mean scoop 1/2 cup of pinto into each Burrito, or does your recipe only call for 1 cup of refried beans? Or do we need more tortillas?
