These Biscuit & Gravy Casseroles are hands-down my teenage son’s favorite meal prepped breakfast, and honestly, I get why. They’re warm, hearty, and feel like a classic comfort-food breakfast… but still fit into a macro-balanced plan.

This is one of those recipes that proves meal prep doesn’t have to feel boring or restrictive. When breakfast is already made and sitting in the fridge, it’s a whole lot easier to fuel busy mornings without resorting to grabbing something on the go.

Ingredients

  • Breakfast turkey sausage
  • Jumbo biscuits (I used Grands Southern Homestyle Biscuits – 3p | 27c | 7f each)
  • Butter
  • All-purpose flour
  • Fat-free Fairlife milk
  • Salt
  • Pepper
  • Garlic powder
  • Liquid egg whites
  • Large eggs

Substitutions & Swaps

  • Sausage: Use pork breakfast sausage or chicken sausage if preferred (macros will change).
  • Biscuits: Swap for smaller biscuits or homemade biscuit dough if desired.
  • Milk: Any milk will work, but fat-free Fairlife keeps protein higher.
  • Eggs: Use all whole eggs if you prefer a richer texture.

This hearty, comfort-style breakfast is perfect for busy mornings, growing teens, and anyone looking for a macro-balanced breakfast that reheats easily.

Ingredients 

  • 16 oz breakfast turkey sausage
  • 5 jumbo biscuits, I used Grands Southern Homestyle Biscuits – 3p | 27c | 7f each
  • 1 ¼ tablespoons butter, 17.5g
  • 2 ½ tablespoons all-purpose flour, 19g
  • 1 ¼ cups fat-free Fairlife milk
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon garlic powder
  • 1 ¼ cups liquid egg whites
  • 2 large eggs

Instructions 

  • Preheat the oven to 350°F. Arrange 5 oven-safe containers on a baking sheet and lightly spray with cooking spray.
  • Cut each biscuit into quarters. Place the pieces from one full biscuit into each container.
  • Heat a large skillet over medium-high heat. Cook the turkey sausage until fully cooked and no longer pink. Drain excess grease, remove from the pan, and set aside.
  • Using the same skillet (do not wipe it out), melt the butter over medium heat. Whisk in the flour — the mixture will be thick and clumpy at first.
  • Slowly whisk in the milk, about 2 tablespoons at a time, until smooth. Continue cooking and whisking until the gravy thickens.
  • Remove from heat and stir in the salt, pepper, garlic powder, and cooked sausage.
  • In a mixing bowl, whisk together the egg whites, whole eggs, and a pinch of salt and pepper.
  • Evenly pour the egg mixture over the biscuits in each container. Spoon the sausage gravy evenly over the top.
  • Bake for 30 minutes, or until the eggs are fully set and the biscuits are golden brown.
  • Let cool before covering and refrigerating. Reheat in the microwave for 2–3 minutes.

    1. I don’t see why not. I freeze meals all the time. Just let the glass bowls defrost before reheating so they don’t crack.

    Absolutly delicious. I’m not sure how they reheat because everyone decided they wanted some and more this morning. My only advice. Cut the salt in half atleast. The sausage is already salty on its own.

    1. Hi Mandy! I should specify that I use Maldon salt in all my recipes. It’s mild, and more like a finishing salt. I struggle with how much salt to list in all my recipes because some say it’s too much and then the next person says it’s not enough. Haha. Thanks so much for the kind review regardless!     1. Hi Kelly, I use a flake salt in all y recipes. If you use a finer table salt. you might find that it’s too much. But as always with any recipe, season to your liking and always start with less.
