  • Turkey Breakfast Sausage Roll
  • Kodiak cakes or Clean Simple Eats pancake mix
  • Fat free milk (I use Fairlife)
  • Maple extract
  • Kraft American cheese
  • Liquid egg whites
  • Salt & pepper

How to Make It

  1. Bake the Egg Rounds: Preheat your oven to 350°F. Spray an XL muffin or donut pan with cooking spray. Pour ¼ cup egg whites into each cup, season with salt and pepper, and bake for 15 minutes or until set.
  2. Cook the Sausage Patties: Slice the turkey sausage into 5 equal portions and form into patties. Cook over medium-high heat until browned and fully cooked through, flipping once.
  3. Make the Pancakes: In a bowl, whisk together the pancake mix, milk, and maple extract. Cook 10 mini pancakes (about 2 tablespoons of batter each) on a greased griddle or skillet over medium heat.
  4. Assemble the Sandwiches: On one pancake, layer 1 slice of cheese, 1 egg round, and 1 sausage patty. Top with a second pancake.
  5. Wrap and Store: Wrap each sandwich in parchment paper, foil, or plastic wrap. Store in the fridge for up to 5 days or freeze for up to 1 month.

Sausage Griddlers

Sausage Griddlers are savory-sweet breakfast sandwiches made with turkey sausage, fluffy protein pancake buns, melty American cheese, and seasoned egg whites, all infused with a hint of maple flavor.

Equipment

Ingredients 

  • 16 oz. Turkey Breakfast Sausage Roll
  • 1 1/2 cups Kodiak cakes or Clean Simple Eats pancake mix, 159g
  • 1 cup fat free milk, I use Fairlife
  • 1/4 teaspoon maple extract
  • 5 slices Kraft American cheese
  • 1 1/4 cups liquid egg whites
  • salt & pepper

Instructions 

  • Preheat the oven to 350 degrees. Spray an XL muffin pan or donut pan lightly with cooking spray. Fill each cup with 1/4 cup liquid egg whites. Season with some salt and pepper and bake for 15 minutes.
  • Slice the ground turkey sausage into 5 equal pieces. Press into a flat, round patty. Cook over medium high heat, flipping halfway through. Cook until no longer pink in the center.
  • In a mixing bowl combine the pancake mix, milk, and maple extract. Over medium high heat, cook 10 mini pancakes. Use 2 tablespoons of pancake mix per pancake (45g).
  • On one pancake stack a slice of cheese, 1 egg round, and 1 piece of cooked sausage. Top with another pancake.
  • Wrap each sandwich individually in parchment paper, foil, or in plastic food wrap and place them in the fridge or freezer. Freeze for up to one month.
  • For best results remove from the freezer the day before reheating. Remove paper and wrap the sandwich in a paper towel. Microwave for 40 seconds – 1 minute. Add some syrup to your sandwich before eating for extra sweetness.

Notes

  • Try with Kodiak Cakes blueberry pancake mix and the macros are the same!
