Cherry Chocolate Breakfast Cookies
Equipment
Ingredients
- 2 medium ripe bananas
- 1/3 cup nut butter, 86g
- 1/3 cup honey, 112g
- 2 large eggs
- 1.5 teaspoons vanilla extract
- 4 cups rolled oats
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup dried cherries
- 1/3 cup white chocolate chips, 66g
Instructions
- Preheat the oven to 350 degrees.
- Mash or blend the bananas up well with a food processor.
- Mix in the nut butter, honey, eggs, and vanilla.
- Blend in half the oats (or use a blender to blend half the oats and mix in).
- Mix in remaining ingredients and scoop into a parchment lined baking sheet. I use a large cookie scoop and made 13 cookies (65g each). Bake for 12 minutes, or until the tops start to turn a golden brown.
- Let them cool completely and keep refrigerated up to 5 days.
Notes
- You can change the serving size in the apps to 1 gram and make the cookies any size you like.
