If you’re looking for a hearty, protein-packed breakfast that actually keeps you full for hours, these Macho Breakfast Burritos are it. Loaded with crispy bacon, turkey sausage, eggs, hash browns, and melty cheese, these burritos are one of my favorite grab-and-go breakfasts to keep stocked in the freezer.
They’re perfect for busy mornings, feeding hungry teenagers, post-workout meals, or meal prepping ahead for the week. And despite the “macho” name… trust me, everyone in the family loves these.
The best part? Each burrito packs over 50 grams of protein and reheats beautifully in the microwave or air fryer.

- Bacon
- Turkey breakfast sausage

- Want extra crunch? Toast the burritos in a skillet after rolling them up or air fry them for a few minutes on each side.

How to Make Macho Breakfast Burritos
- Follow the instructions on the back of the dehydrated hash browns to rehydrate them using hot water.
- Slice the bacon into small 1/4-inch pieces. Cook in a large skillet over medium-high heat until crispy. Remove and strain excess grease.
- In the same skillet, cook the turkey sausage until no longer pink. Drain grease and stir the bacon back into the pan.
- Add the hash browns and cook for 3–5 minutes to crisp them up slightly.
- In a bowl, whisk together the liquid egg whites and cottage cheese until well combined. Pour into the skillet with the meat mixture.
- Cook until the eggs are mostly set. Season with salt and pepper to taste.
- If meal prepping for later, allow the mixture to cool completely before assembling the burritos.
- Lay the tortillas flat and sprinkle 28 grams of cheese onto each tortilla.
- Divide the breakfast mixture evenly between the tortillas.
- Fold in the sides and roll tightly into burritos.
- Wrap individually or place into meal prep bags for storage.

Crisping the hash browns before adding the eggs gives the filling much better texture.

Yes! These freeze extremely well and are one of my favorite high-protein freezer breakfasts. Make sure to let them cool completely before wrapping and packing up for storage.
Do the cottage cheese curds melt?
Once cooked into the eggs, the cottage cheese melts down some and blends right into the filling.
Can I make these lower calorie?
You can reduce the calories by using turkey bacon, reduced fat cheese, or smaller or lower carb tortillas.
What tortillas work best?
Large burrito-sized flour tortillas work best for rolling and holding all the filling. These are big ones so you need large tortillas. The uncooked tortillas I use in my other burrito recipes will be too small for these.

Macho Breakfast Burritos
Ingredients
- 1 box Hungry Jack dehydrated potatoes, 119g (or 3 1/2 cups cooked hash browns)
- 1 pound bacon
- 1 pound turkey breakfast sausage
- 2 cups liquid egg whites
- 1 cup low fat cottage cheese
- 5 large flour tortillas
- 1 2/3 cups shredded Mexican cheese blend, 140g
Instructions
- Follow instructions on the back of the hash browns to re-hydrate them (add hot water).
- Slice up bacon into 1/4″ pieces. Cook in a fry pan over medium high heat until crispy. Strain grease and set aside.
- Cook the ground sausage until no longer pink. Strain grease and add back in the cooked bacon.
- Add the hash browns and cook 3-5 minutes to crispy up some.
- In a bowl mix up the eggs and cottage cheese well. Pour into the fry pan with other ingredients. Cook until eggs are mostly done. Season with salt and pepper and let cool completely if storing burritos for eating later.
- Lay out the tortillas and add 28g cheese to each one. Divide up the burrito mixture amongst the 5 tortillas.
- Fold the sides of the burrito in, roll into a burrito.
- Place in a bag or wrap burritos individually.
- To reheat burritos, microwave 2 minutes and then air fry 4 minutes at 325 degrees.
