Preheat the oven to 400 degrees and arrange 5 oven safe containers on a cookie sheet.
Slice the tops of the peppers off so they will fit in the meal prep bowls (set the tops aside, you will use these later). Rinse well, place 1 in each bowl and spray with some cooking spray. Bake for 15 minutes.
Over medium high heat, cook the sausage and turkey until no longer pink. Add the onions, mushrooms, and leftover bell pepper (dice up the tops around the stem).
Cook for 3-5 minutes until the veggies are soft.
Add the seasonings, tomato sauce, paste, rice, and parmesan cheese. Mix well and stuff in peppers. Top with the mozzarella cheese and place back in the oven another 5 minutes to melt the cheese.
Let cool before covering with lids and placing in the refrigerator. Reheat in the microwave for 2-3 minutes.
