- Cocoa powder
- Baking powder
- Baking soda
- Salt
- Zucchini

- Sweetened coconut flakes

What Kind of Protein Powder Should I Use?

Common Substitutions
-Stevia or Monk Fruit Sweetener: If you’re looking to reduce sugar or make the recipe lower-carb, you can substitute a zero-calorie sweetener like stevia, monk fruit, or erythritol. Be sure to check the conversion chart for your chosen sweetener since some are much sweeter than sugar (you’ll likely need less).
-Maple Syrup for Honey: If you have maple syrup on hand and don’t have honey, swap maple syrup in 1:1.
-Milk Substitutes: For a dairy-free muffin, swap out regular milk for almond milk, oat milk, or coconut milk. Just make sure to choose an unsweetened version if you’re trying to reduce sugar.
-Greek Yogurt Substitute: If you need a dairy-free option for Greek yogurt, try coconut yogurt or almond milk-based yogurt. These will still provide a creamy texture but won’t offer the same protein content as Greek yogurt. You can also use mashed banana or applesauce but remember the macros will be altered.
-Coconut Oil Substitute: Use olive oil, vegetable, or butter in this one.
-Protein Powder: If you’re looking for a dairy-free protein powder, opt for plant-based protein like pea, hemp, or brown rice protein.
-Sugar-Free Chocolate Chips: If you’re trying to make this recipe even more health-conscious, you can substitute regular chocolate chips with sugar-free or stevia-sweetened chocolate chips.
-Cacao Nibs: For a more bitter, crunchy chocolate element, cacao nibs are a great option. They’re also packed with antioxidants but don’t offer the same sweetness as chocolate chips.

- Parchment Paper Tulip Liners–these are kind of a nice touch to add to your muffins!
- 12 Cup Muffin Tin–you can use one of these, or the silicone ones are great if you don’t have liners.
- Food Processor–You can use a grater to grate your zucchini or you can toss it in the food processor!

Can I Make These Muffins Gluten Free?
I haven’t tried it yet, but I’m willing to bet Measure for Measure flour would work great! If you try it, please let us know!
Fun Variations
- Use a different flavor of protein powder- Chocolate brownie, snickerdoodle, or even just vanilla might be great!
- Top with different flavors of chips- butterscotch, mint chocolate chips, cinnamon, etc.
- Add any nuts you like. Again, just remember the macros will need to be adjusted if you’re planning to log these in your food diary.
Storing Instructions
To store German chocolate protein muffins, you’ll want to keep them fresh for as long as possible. Here are some tips for different storage options:
1. Room Temperature (Short-term)
- If you plan to eat them within 2-3 days, you can keep them in an airtight container at room temperature.
- To prevent them from getting too dry, you could wrap each muffin individually in plastic wrap or foil.
2. Refrigeration (Medium-term)
- If you want to keep them for a little longer (about 5-7 days), store them in an airtight container in the fridge. This will help prevent any potential spoilage from the protein powder.
- Again, individually wrapping them in plastic wrap or placing parchment paper between the muffins could help preserve their moisture.
3. Freezing (Long-term)
- For longer storage (up to 3 months), freezing is the best option.
- Wrap each muffin tightly in plastic wrap or foil, and then place them in a freezer-safe bag or container.
- When you want to eat one, just take it out and let it thaw at room temperature or microwave it for a few seconds.

German Chocolate Protein Muffins
Ingredients
- 1 cup all purpose flour, 120g
- 2 scoops German Chocolate Cake CSE protein powder, 68g
- 3 tablespoons cocoa powder, 15g
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 medium zucchini, 150g
- 1 cup Fairlife fat free milk
- 2 tablespoons honey, 42g
- 1 large egg
- 2 tablespoons coconut oil, 28g
- 45 g milk chocolate chips, 48 Ghirardelli milk chocolate chips, 4 per muffin
- 12 g sweetened coconut flakes
Instructions
- Preheat the oven to 350 degrees.
- Shred your zucchini with a cheese grater and squeeze all excess water out using a paper towel.
- To a blender add all ingredients but the chocolate chips and coconut flakes. Pulse a few times until mixed well.
- Pour into lined or a silicone muffin tin. Fill each cup about 3/4 of the way. It should make 12 muffins. Top each muffin with the chocolate chips and coconut flakes.
- Bake for 15-20 minutes. I actually prefer my muffins a little under done so it doesn’t get spongy.
- Let cool, store in an airtight container or bag. Keep for up to 1 week or freeze for up to 3 months.
