German chocolate protein muffins are rich, moist treats made with a blend of chocolate, topped with coconut, and packed with protein for a deliciously healthy snack.
45gmilk chocolate chips48 Ghirardelli milk chocolate chips, 4 per muffin
12gsweetened coconut flakes
Instructions
Preheat the oven to 350 degrees.
Shred your zucchini with a cheese grater and squeeze all excess water out using a paper towel.
To a blender add all ingredients but the chocolate chips and coconut flakes. Pulse a few times until mixed well.
Pour into lined or a silicone muffin tin. Fill each cup about 3/4 of the way. It should make 12 muffins. Top each muffin with the chocolate chips and coconut flakes.
Bake for 15-20 minutes. I actually prefer my muffins a little under done so it doesn't get spongy.
Let cool, store in an airtight container or bag. Keep for up to 1 week or freeze for up to 3 months.
