These wholesome cherry chocolate breakfast cookies combine ripe bananas, nut butter, honey, and oats with dried cherries and white chocolate chips for a naturally sweet, hearty, and satisfying start to your day.
Mash or blend the bananas up well with a food processor.
Mix in the nut butter, honey, eggs, and vanilla.
Blend in half the oats (or use a blender to blend half the oats and mix in).
Mix in remaining ingredients and scoop into a parchment lined baking sheet. I use a large cookie scoop and made 13 cookies (65g each). Bake for 12 minutes, or until the tops start to turn a golden brown.
Let them cool completely and keep refrigerated up to 5 days.
Notes
You can change the serving size in the apps to 1 gram and make the cookies any size you like.
