Today I’m sharing my delicious Buffalo Mac & Cheese recipe and if you’re a fan of buffalo sauce, you’re going to love it! I’ve shared this one in the Monthly Macro Meals and it’s been a hit among so many people! With a hint of heat from the buffalo sauce and the creamy deliciousness you expect from mac & cheese, this recipe will quickly become a favorite! It also makes a lot, and is delicious reheated, so it’s also a great recipe for some meal prep!

Buffalo Mac & Cheese ingredients

Ingredients

  • Lean ground beef or turkey
  • Onion
  • Garlic powder
  • Fat free Fairlife milk
  • Water
  • Bouillon cubes *optional
  • Tomato sauce
  • Franks Red Hot Sauce
  • Ranch seasoning
  • Pasta noodles
  • 1/3 less fat cream cheese
  • Reduced fat shredded cheese

Optional Toppings

  • green onions
  • blue cheese crumbles – not in the recipe but highly recommended as a topping!

Reheating Instructions

This Buffalo Mac & Cheese reheats so well! This makes a lot and is great for meal prep! Just reheat in the microwave 2-3 minutes!

Freezing Instructions

If needed, you can freeze the leftovers. Make sure to let it defrost well before reheating so you don’t have mushy pasta!

Buffalo Mac & Cheese

A creamy, buffalo flavored Mac & cheese! A fun twist on everyone's favorite classic dish!

Ingredients 

  • 2 pounds lean ground beef or turkey
  • 1/2 medium onion, diced (150g)
  • 1 teaspoon garlic powder
  • 3 cups fat free Fairlife milk
  • 1.75 cups water
  • 2-3 bouillon cubes , *optional
  • 8 ounces tomato sauce
  • 1/2 cup Franks Red Hot Sauce
  • 3 tablespoons ranch seasoning
  • 16 ounces pasta noodles
  • 8 ounce package 1/3 less fat cream cheese
  • 8 ounces reduced fat shredded cheese

Instructions 

  • In a large pot over medium-high heat, cook diced onion and ground turkey until turkey is browned and onion is tender. Strain out any excess grease.
  • Pour in the milk, water, bouillon cubes, tomato sauce, Red Hot, and ranch seasoning. Bring to a simmer. Stir in the pasta and cook uncovered for 10–12 minutes, or until pasta is cooked and liquid has reduced down.
  • Toss in the cream cheese and shredded cheese and stir until melted. Serve immediately.

Notes

  • I used and calculated the recipe using 99/1 lean ground turkey. If you can only find 93/7 I wouldn’t stress about the macro difference because a lot of the fat cooks off and is strained out in this one.
