Sausage Breakfast Bowls

You all have been loving these breakfast meal prep recipes, so today I’m here to hare my new Sausage Breakfast Bowls. It’s so convenient to have breakfast ready to pop in the microwave in the mornings, especially if you have busy mornings like I tend to and especially on those mornings I find myself running late. These yummy bowls are filled with sweet potatoes, sausage, eggs, and bell peppers. If you’re in the mood for a delicious, savory breakfast you need to make these as soon as possible!

INGREDIENTS
- Sweet potatoes
- Avocado oil
- Breakfast turkey sausage
- Red bell pepper,
- Green bell pepper
- Eggs
- Egg whites
- Salt
- Pepper

- Broccoli

- Riced Cauliflower
Recipe Tip
Add 1/4 cup of cottage cheese to each bowl for another 7 grams of added protein!
Need Even More Protein?
- Top each bowl with 1 ounce of shredded cheese for another 7 grams of protein!
- Add some cooked bacon or bacon bits!

- Can I make this in a 1 casserole dish for my family? Yes of course. This would fit well in a 9X13 casserole dish. Make it exactly the same, just allow for a little longer cook time once you add all the eggs.

MEAL PREP SUPPLIES USED
4 cup glass bowls – Make sure the bowls you’re purchasing are oven safe. They will say so on the label if purchasing in store.
Half size sheet pan – This is the perfect size pan for this size of glass bowls. Using a sheet pan makes it easier to transfer your 5 bowls in and out of the oven.
STORING INSTRUCTIONS
Let your Sausage Breakfast Bowls cool completely and then cover tightly with lids and store in the fridge for up to 5 days.
REHEATING INSTRUCTIONS
When you’re ready for your delicious breakfast, these bowls can be reheated in the microwave for 2-3 minutes or until warmed through.

Sausage Breakfast Bowls
Equipment
Ingredients
- 2 large sweet potatoes, diced (30 oz.)
- 1/2 tablespoon avocado oil, 7g spray
- 1 pound breakfast turkey sausage
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 5 large eggs
- 2 1/2 cups egg whites
- 1/2 teaspoon salt
- pinch of pepper
Instructions
- Preheat the oven to 400 degrees and arrange 5 oven safe containers on a cookie sheet.
- Evenly divide the sweet potatoes up into the 5 bowls (6 oz. per bowl) and spray with the avocado oil. Season lightly with salt and pepper and mix them well.
- Bake for 35-40 minutes, or until sweet potatoes are cooked to your liking.
- While the potatoes are cooking, cook the turkey sausage in a pan over medium-high heat until no longer pink. Strain out any excess grease, cover and set aside.
- Dice up the bell peppers and set aside.
- When the potatoes are done cooking remove the bowls from the oven and evenly distribute the sausage and bell peppers into each bowl.
- To each bowl add 1 egg and 1/2 cup liquid egg whites. Sprinkle each bowl with salt and pepper and mix well.
- Bake in the oven another 35-40 minutes, or until the eggs in the center of each bowl appear to be cooked.
- Let cool before covering with lids and placing in the refrigerator. Reheat in the microwave 2-3 minutes each morning.

In my fitness pal, it lists this recipe has 36 grams of protein instead of 26.
Hi Audra, I just checked and it looks like it’s correct. I think you might have been looking at the breakfast bowls, instead of the sausage breakfast bowls.

Do you add the cottage cheese before cooking?
Hi Jessica, Yes I’d mix the cottage cheese in with the liquid egg whites before adding those and baking.
Could you use frozen sweet potatoes?
So easy, quick and delicious! I also love that my son felt inspired enough to do variations with alternate veggies. Great idea!
