Preheat the oven to 400 degrees and arrange 5 oven safe containers on a cookie sheet.
Evenly divide the sweet potatoes up into the 5 bowls (6 oz. per bowl) and spray with the avocado oil. Season lightly with salt and pepper and mix them well.
Bake for 35-40 minutes, or until sweet potatoes are cooked to your liking.
While the potatoes are cooking, cook the turkey sausage in a pan over medium-high heat until no longer pink. Strain out any excess grease, cover and set aside.
Dice up the bell peppers and set aside.
When the potatoes are done cooking remove the bowls from the oven and evenly distribute the sausage and bell peppers into each bowl.
To each bowl add 1 egg and 1/2 cup liquid egg whites. Sprinkle each bowl with salt and pepper and mix well.
Bake in the oven another 35-40 minutes, or until the eggs in the center of each bowl appear to be cooked.
Let cool before covering with lids and placing in the refrigerator. Reheat in the microwave 2-3 minutes each morning.
