Can I Use Swerve as a Substitute for the Sugar?

Yes! I will provide the macros below for this substitution. If using Swerve swap out both the sugar and brown sugar for 4 tablespoons of Swerve. You can use all granular Swerve, or 2 tablespoons of granular and 2 of the brown sugar Swerve.

SUPPLIES USED

Half Sheet Pan – My favorite for both baking my meal prep bowls AND baking these cookies!

Short-Term Storage (up to 5 days):

  • Container: Store the cookies in an airtight container.
  • Temperature: Keep at room temperature in a cool, dry place.
  • Tip: Add a slice of bread or a marshmallow to the container to help maintain softness.

Medium-Term Storage (up to 2 weeks):

  • Refrigerator: Store in an airtight container in the fridge.
  • Texture Note: May firm up a bit in the fridge — just let them come to room temp or microwave for 5-10 seconds before eating.

Long-Term Storage (up to 3 months):

  • Freezer: Place cookies in a single layer on a baking sheet to freeze individually, then transfer to a freezer-safe bag or container.
  • Reheating: Microwave for 10–15 seconds or thaw at room temp.

Protein Chocolate Chip Cookies

Soft, chewy protein chocolate chip cookies made with a hint of vanilla and packed with sweet mini chocolate chips for a guilt-free treat.

Ingredients 

  • 3 tablespoons butter, room temperature (42g)
  • 2 tablespoons sugar, 28g
  • 2 tablespoons brown sugar, 28g
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 scoop CSE simply vanilla protein powder
  • 1/3 cup all purpose flour
  • 1/4 teaspoon baking soda
  • pinch of salt
  • 1/4 cup mini chocolate chips, 56g

Instructions 

  • Preheat the oven to 375 degrees.
  • In a small mixing bowl cream together the butter, sugars, egg, and vanilla.
  • Mix in the protein powder, flour, baking soda.
  • Once a dough forms mix in the chocolate chips.
  • Roll dough into 6 equal balls and place on a cookie sheet. Gently press down on the cookies so they are just slightly pressed.
  • Bake for about 8 minutes or until the edges appear golden brown. Remove from oven and let cool on the cookie sheet for at least 1 minute before removing.
  • These are best served warm. Enjoy!
