This Protein Cheesecake for One is my protein-packed spin on the viral Japanese cheesecake that’s been all over social media lately. I’ve been making it on repeat and have to give it a permanent spot here on the blog. It’s creamy, lightly sweet, and perfectly portioned for one serving. Ingredients
- 3/4 cup plain non fat Greek yogurt
- 1 tablespoon fat free milk
- 1 scoop Clean Simple Eats Whey Protein, any flavor
- 4 Biscoff cookies
Instructions
- Add the Greek yogurt and fat-free milk to a small bowl and stir until smooth and creamy.
- Add the protein powder and mix well until fully combined and no lumps remain. Optional: Stir in any fruit you’d like (I used sliced strawberries).
- Press Biscoff cookies gently into the surface of the yogurt mixture, submerging them as best you can. If they stick up some it’s fine.
- Cover the bowl and refrigerate for at least 4 hours (or overnight). As it chills, the cookies will soften and absorb moisture, creating a thick, cheesecake-like texture.
- Enjoy cold straight from the fridge, or add extra toppings just before serving if desired. This Protein Cheesecake for One is best enjoyed within 24–48 hours when stored covered in the refrigerator.
