Add the Greek yogurt and fat-free milk to a small bowl and stir until smooth and creamy.
Add the protein powder and mix well until fully combined and no lumps remain. Optional: Stir in any fruit you’d like (I used sliced strawberries).
Press Biscoff cookies gently into the surface of the yogurt mixture, submerging them as best you can. If they stick up some it's fine.
Cover the bowl and refrigerate for at least 4 hours (or overnight). As it chills, the cookies will soften and absorb moisture, creating a thick, cheesecake-like texture.
