My mom grew up in Mexico and her Latina culture shined through all sorts of breakfast dishes that she created for us, but one fruit I have grown to absolutely LOVE for breakfast is papaya. I remember my first trip to Mexico with my mom at the young age of six. I experienced papaya for the first time at the breakfast table with all of my cousins, and I’ve been hooked ever since. Every time papaya comes into season at my local grocery store I smile and remember that special trip where I met so many family members for the first time.
Now that I have two hijos of my own, getting a nutritious breakfast with protein for the whole family to start the day is a necessity.
I have tried and tried to get my boys to eat their eggs, but they LOVE their waffles in the morning! When I got a hold of Nestlé Carnation Breakfast Essentials® Powder at Walmart, and I saw that it was loaded with protein, I couldn’t wait to create a delicious papaya waffle recipe that was convenient and would satisfy our morning hunger!

This recipe yields two servings (two waffles). Perfect in the morning for you AND your little one! You will need 1/2 cups of oats, 3 egg whites, 1/4 banana, 1 packet of vanilla Carnation Breakfast Essentials®, 1 teaspoon of cinnamon, 1 teaspoon of baking soda, and 1/4 teaspoon of salt. We topped each waffle with Walden Farms Calorie Free Syrup, some slices of papaya, Enjoy Life Chocolate Chips, and a tablespoon of Cool Whip.
Using our Ninja, we blended all the ingredients (oats, egg whites, banana, and vanilla Carnation Breakfast Essentials®) and then poured our newly created waffle batter into our waffle maker. Ingredients
- This recipe yields 2 servings.
- 1/2 cup Oats
- 3 Egg Whites
- 1/4 Banana
- 1 packet of Vanilla Nestlé Carnation Breakfast Essentials
- 1 teaspoon Baking Powder
- 1 teaspoon Cinnamon
- 1/4 teaspoon Salt
- For Toppings
- 2/3 cup Papaya
- Walden Farms Calorie Free Syrup
- 4 tablespoons Cool Whip
- 4 teaspoons Enjoy Life Chocolate Chips
Instructions
- Blend all ingredients (excluding toppings) together. Pour newly created waffle batter into the waffle maker. Cook until waffle looks golden brown.
