My One Dish Lemon Chicken Orzo is a tasty and easy dish made with juicy chicken, small pasta called orzo, asparagus, and a delicious lemony sauce. The chicken is cooked until tender, and the lemon adds a fresh, zesty flavor that makes the whole dish feel light and refreshing. It’s a great meal for any day of the week, full of flavor and simple to make. I just love the light lemon flavors mixed with the orzo and chicken, they really make such a delicious meal!

Chicken Breasts for Thighs – Just keep in mind this will change the macros per serving.
Swap in Rice for the Orzo – You can do this, but cook time will be 35-40 minutes. Or you can use minute rice and cook time should stay the same.

STORING & REHEATING INSTRUCTIONS
To store your leftover One Dish Lemon Chicken Orzo, let it cool down to room temperature first. Then, transfer it to an airtight container and refrigerate it. It should stay good for about 3-4 days. If you’d like to reheat it, you can warm it up in the microwave or on the stove with a splash of water or broth to prevent it from drying out. Just be careful not to overheat, as the chicken and pasta may become tough if cooked too long.

One Dish Lemon Chicken Orzo

Ingredients
- 2 pounds boneless, skinless chicken thighs
- 1 tablespoon olive oil, 14g
- 2 teaspoons oregano
- 2 teaspoons paprika
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon butter, 14g
- 3-4 cloves garlic, minced
- 1/2 small onion, diced (75g)
- 1 cup orzo, uncooked(7oz)
- 2 tablespoons white wine or vinegar
- 2 cups chicken broth
- 28 g parmesan cheese, fresh off the block is always best
- 1 heaping cup asparagus, diced (130g)
- 1 lemon
Instructions
- Preheat the oven to 400 degrees.
- Heat olive oil in a large oven-safe skillet set over medium-high heat. Rub the chicken with the oregano, paprika, salt, and pepper. When the oil has heated up, add the chicken. Sear on both sides until golden, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- To the same skillet, add the butter and onions, cooking until fragrant, about 3 minutes. Add the garlic and orzo and cook until lightly golden, 2-3 minutes.
- Add the wine or vinegar and de-glaze the pan. Add the broth and asparagus. Bring to a gentle boil, cook 3-5 minutes.
- Add the chicken back into the skillet. Sprinkle with lemon zest and squeeze the lemon juice over the top of all the chicken. Top with the parmesan cheese.
- Put in the oven and cook, uncovered for 10-15 minutes, just be sure the chicken reaches 165 degrees. I like to put my meat thermometer in with it so it doesn’t get over cooked.
- Serve and enjoy!
Notes

This recipe was a hit with all of my family, even the rather picky ones. I have one who is gluten intolerant so I substituted jasmine rice, and used chicken breast because that’s what I had.
Everything turned out perfectly cooked, so well flavored. This will definitely be added to our ‘favorites’.
