These Chicken Chunk Scramble Bowls are an easy high-protein breakfast meal prep made with crispy chicken chunks, eggs, egg whites, hash browns, sweet potatoes, and melted cheese. Baked right in individual glass meal prep bowls, each filling breakfast packs 46 grams of protein and is ready to grab, reheat, and eat all week long.
Preheat oven to 375°F. Arrange 5 oven-safe glass meal prep containers on a baking sheet and lightly coat each with cooking spray.
Prepare the hash browns according to package directions to rehydrate them. Do not pan-fry.
Cook the chicken chunks in the air fryer at 375°F for 12–15 minutes, or until heated through and crispy.
Peel and grate the sweet potato using a box or cheese grater.
Evenly divide the prepared hash browns, chicken chunks, and grated sweet potato among the 5 containers.
In a large mixing bowl, whisk together the eggs, egg whites, salt, garlic powder, and black pepper. Divide the egg mixture evenly among the 5 containers.
Top each bowl with 1 ounce of shredded cheese.
Bake for 35–40 minutes, or until the eggs are completely set in the center.
Garnish with chopped chives, if desired. Allow the bowls to cool before covering with lids and refrigerating.
To reheat, microwave uncovered for 2–3 minutes, or until heated through.
