It’s Meal Prep Day! Today, I’m bringing you my recipe for Sloppy Joe Bowls! These bowls are full of deliciousness layered with sweet potatoes on the bottom, a perfectly flavored ground beef mixture, and then topped with even more goodness to make them the perfect meal to have at home or to take on the go!

- Sweet potatoe
- Avocado oil
- Lean ground beef (96/4)
- Salt
- Onion
- Green bell pepper
- Brown sugar
- Chili powder
- Mustard
- Apple cider vinegar
- Ketchup
- Worchestershire sauce
- Tomato sauce
- Diced green chilies

STORING INSTRUCTIONS
You can store your Sloppy Joe Bowls in the fridge to eat throughout the week. Just let them cool, cover with a lid, and store in the fridge for up to 5 days.
REHEATING INSTRUCTIONS
When you’re ready to eat one of your Sloppy Joe bowls, just microwave it for 2-3 minutes for a quick and easy lunch!

Sloppy Joe Bowls
Equipment
Ingredients
- 2 large sweet potatoes, diced (30 oz.)
- 1/2 tablespoon avocado oil, 7g spray
- 2 pounds lean ground beef, 96/4
- 1 teaspoon salt
- 1 medium onion, diced (200g)
- 1 green bell pepper, diced
- 4 tablespoons brown sugar
- 1 tablespoon chili powder
- 2 teaspoons mustard
- 1 tablespoon apple cider vinegar
- 1/2 cup ketchup
- 2 tablespoons Worchestershire sauce
- 16 ounces tomato sauce
- 8 ounce can diced green chilies
Instructions
- Preheat the oven to 400 degrees and arrange 5 oven safe containers on a cookie sheet.
- Evenly divide the sweet potatoes up into the 5 bowls (6 oz. per bowl) and spray with the avocado oil. Season lightly with salt and pepper and mix them well.
- Bake for 35-40 minutes, or until sweet potatoes are cooked to your liking.
- Over medium heat cook the ground beef. Drain fat once cooked.
- Add in the onion and bell pepper and cook until translucent.
- Add in all remaining ingredients and let it simmer 3-5 minutes. Evenly distribute into the 5 bowls.
- Let cool before covering with lids and placing in the refrigerator. Reheat in the microwave 2-3 minutes.
Notes

Delicious.
Love this. Left out the sugar and used sugar free ketchup. You honestly don’t need the sugar. It’s amazing without! And I’d rather save that sugar for a sweet treat. 😉
