Salsa Chicken Bakes
These Salsa Chicken Bakes are an easy, high-protein meal prep packed with tender chicken, rice, salsa, cream cheese, and melted Mexican cheese. Baked all in one dish, they're a flavorful, make-ahead lunch or dinner.

boneless, skinless chicken breast

basmati rice

1/3 less fat cream cheese

salsa

Instructions
Preheat the oven to 350 degrees and arrange 5 oven safe containers on a cookie sheet.
Salt and pepper chicken on both sides. You can additionally season your chicken with your favorite fajita or taco blend if preferred.
To each bowl add 2 tablespoons rice, pinch of salt, 1/4 cup broth, 5 ounces chicken, 2 tablespoons cream cheese, 1/4 cup salsa, and 1 ounce cheese.
Bake about 35-40 minutes, or until the rice is cooked.
Let cool before covering with lids and placing in the refrigerator. Reheat in the microwave for 2-3 minutes.
