Mom’s Christmas Bakes

Every time one of us posts about making Mom’s Christmas Bakes, it seems like everyone wants the recipe! So, I knew it was an absolute must to take this recipe and create it in meal prep form. Having breakfast ready in the morning is such a time saver, especially when it’s healthy and delicious! It makes my mornings run smoother to have something ready to eat that I know is good for me and will keep me satisfied until lunch. This recipe is great any time of the year, not just at Christmas!!

Ingredients
- Ground turkey breakfast sausage
- Bacon
- Sweet potato
- Hash browns (boxed or frozen)
- Low-fat cottage cheese
- Fat-free cheddar cheese
- Liquid egg whites

Use your favorite potatoes! I like to buy these dehydrated ones that you add water to for this recipe, but frozen hash browns or diced frozen potatoes work well too. Find these Hungry Jack potatoes at Costco or Walmart.

SUPPLIES USED
- 4 Cup Glass Bowls – My favorite meal prep dishes. They are oven save and the perfect size for all of your meal prep needs!
- Half Sheet Pan – This sized pan is perfect so that your meal prep bowls don’t slide around!
STORING INSTRUCTIONS
As with all of my meal prep recipes, these are perfect to store and eat throughout the week. Just let Mom’s Christmas Bakes cool, cover with a lid, and store in the fridge for up to 5 days.
REHEATING INSTRUCTIONS
These are perfect to be reheated at any time! Just microwave them for 2-3 minutes when you’re ready to eat if you are packing these for work or on the go. They can also be reheated in the oven for 10 minutes at 350 degrees if you’re not in a rush!

Mom’s Christmas Bakes
Equipment
Ingredients
- 10 ounces ground turkey breakfast sausage
- 5 ounces raw bacon, cut into 1/4” pieces
- 1 medium sweet potato, 375g
- 2 1/4 cups hash browns, boxed or frozen
- 1 cup low-fat cottage cheese, 120g
- 1 1/4 cups fat-free cheddar cheese, 140g
- 10 ounces liquid egg whites
Instructions
- Preheat the oven to 375 degrees and arrange 5 oven safe containers on a cookie sheet. Spray lightly with cooking spray.
- Cook hash browns according to package directions.
- In a pan, cook turkey sausage and bacon. Drain fat when cooked.
- Wash and peel sweet potato. Grate with cheese grater into a large mixing bowl.
- Combine all ingredients and mix well.
- Divide evenly into containers and bake for 50 minutes or until the center is cooked through.
- Let cool before covering with lids and placing In the refrigerator up to 5 days.
Notes
- Sub in full fat cheese and just add 8g fat to your food diary. You can search the food database for “Fat gram” to do this.

What is the reheat time

I just reheat about 2 minutes in the microwave.
I love this recipe! I like to use turkey bacon in place of pork and I use lean ground chicken. I have also been playing around and adding chopped up green onions. I have used both frozen and dehydrated hashbrowns and they work well. It is currently in heavy rotation right now for my second breakfast.

This has become such a staple in our house – thank you to you AND your lovely mom! I love your meal prep bowls because typically I am just cooking for two and this allows me to make simple, healthy meals every couple of days. Since this makes a flat 5 we always bicker about who gets the extra bowl because it’s so yummy 🙂 Thank you!
Pro tip for some asking about dividing among the bowls – use a kitchen scale. I eyeball all of them and weigh them in grams (I promise it is easier to the math the math that way – haha) and adjust the mixture evenly. My bowls are all exactly the same weight so this is fastest for me, but if I use alternate bowls I just zero out each time and weigh the food only. It goes by super quickly once you do it a few times.
I am really interested in making these so when it come to fill the containers how many ounces or grams do you put in each container ?
If this was done in one pan instead of 5 bowls, would the cook time be the same or longer?
Hi Allie, cook time is usually the same in the small bowls.
Does this make 5 or 4 servings ? It says 5 servings but under equipment needed it says 4 glass bowls.

You’re missing the step with the egg whites? When do those get added to the bowls?
I think the egg whites are included in step 5.
Step 5 says to combine all ingredients. That would be when you add the egg whites etc.
Great depth of flavor with the potato mix and the bacon/sausage mix. Will absolutely make again!
These are so yummy and such an easy meal prep for breakfast or dinner.
Love these bowls! Any ideas for substituting some potatoes or sweet potatoes for other veg?
I think you could easily add some extra veggies or swap in a portion of the potatoes for some spinach, or broccoli. Worth a try for sure.
