Today I’m giving you another family favorite! This Hatch Green Chile Mac & Cheese is such a fun and delicious take on Mac & Cheese. Last time I made it, my son said he couldn’t believe how good it was! It really does have the best flavor with the help of the green chiles. It’s so cheesy and has such a smooth and creamy texture. If you’re looking to change up your pasta for dinner, this is a great way to do it!

Ingredients
- Elbow pasta
- Ground beef (90/10)
- 1/3 less fat cream cheese
- Reduced fat Mexican cheese blend
- 2% milk
- Diced green chiles (I use 505 Southwestern Hatch Valley Green Chiles)
- Salt and pepper (optional)
Recipe Tip
Leave the cream cheese block out on the counter to soften up while you cook the pasta and beef.
Reheating Instructions
This Hatch Green Chile Mac & Cheese reheats so well! This recipe makes a lot and is great for meal prep! Just reheat in the microwave 2-3 minutes!
Freezing Instructions
If needed, you can freeze the leftovers. Make sure to let it defrost well before reheating so you don’t have mushy pasta! It reheats great after being frozen! You can add a little bit of extra milk to make it creamy again!

Hatch Green Chile Mac & Cheese
Ingredients
- 16 ounces elbow pasta, dry
- 1 pound ground beef, 90/10
- 8 ounces 1/3 less fat cream cheese
- 6 ounces reduced fat Mexican cheese blend
- 1/2 cup 2% milk
- 8 ounces diced green chiles, I use 505 Southwestern Hatch Valley Green Chiles
- salt and pepper, optional
Instructions
- Cook the ground beef until no longer pink. Drain any excess fat.
- Cook pasta according to package directions, making sure to add 1 tablespoon kosher salt to the water.
- Drain the pasta, and add it to the same pot as the beef.
- Add all other ingredients and stir until melted.
- Season with salt and pepper, if desired.
Notes
- This recipe is originally from Easy Macros Meals cookbook. I made a small change to the recipe (I’m calling for 90/10 ground beef instead of 85/15) so the macros are a little better. Search the apps for, “Stay Fit Mom Hatch Green Chile Mac & Cheese (90/10)” to log this one.
Made this with one tweak, which was that I added a 4oz can of diced jalapeños just for a little kick. My family LOVED it!! Will definitely make this again!!
