Ingredients 

  • 2 pounds boneless, skinless chicken tenders
  • 1 pound trimmed asparagus
  • 1 tablespoon extra virgin olive oil
  • 1/2 tablespoon lightly dried basil
  • 1 cup 2% milk
  • 2 tablespoons butter
  • 1 1/2 tablespoons flour
  • 1 tablespoon garlic paste
  • fresh basil , for garnish

Instructions 

  • Over medium-high heat, warm up your olive oil. Sprinkle your chicken with salt, pepper and basil. Cook chicken until the middle is no longer pink and set aside in a new bowl.
  • While the chicken is cooking, boil your asparagus in a pot of salted water for 4 minutes. Strain and set aside.
  • Using the same pan you cooked the chicken in, warm up your butter and garlic paste.
  • Add the flour and mix well. It will be clumpy.
  • Slowly stir in the milk and continue cooking until the sauce begins to thicken.
  • Add the chicken tenders and asparagus back into the pan. Coat the chicken and asparagus with the creamy sauce. Top with fresh basil and serve.

    I made this for dinner tonight. My entire family liked it! I did not have garlic paste, so I used minced garlic. I also used Bob’s Red Mill Measure for Measure GF flour since my daughter is Celiac. You could not tell, but the sauce was a little grainy. That may have been from my subs. We will be making it again.
