Chicken Spinach Calzone

Today I’m sharing my Chicken Spinach Calzone recipe with you! I love a good calzone and this one is macro friendly and delicious! This recipe is loaded with chicken, spinach, and cheeses all packed into a delicious dough pocket that can be baked in the oven or cooked in the air fryer to make it extra crispy. You can also experiment with other favorite flavors to switch things up!

Ingredients
For the Dough:
- Self rising flour (or all purpose flour + 1 tablespoon baking powder + 1 & 1/2 teaspoons salt)
- Plain non fat Greek yogurt (454g)
- Italian or pizza seasoning
For the Filling:
- Cooked boneless, skinless chicken breast
- Butter
- Garlic clove
- Cottage cheese
- Low fat ricotta
- Freshly grated parmesan cheese off the block
- Salt
- Pepper
- Nutmeg
For the Topping:
- Egg
- Freshly grated parmesan cheese off the block

Supplies Used
Air Fryer – I love using my air fryer whenever I can! It makes things so crispy and is just quick and easy to use and saves me from heating up my house with my oven–especially in the hot Vegas summers!

Storing & Reheating
You can store your leftover Chicken Spinach Calzones in an air tight container or a baggie in the fridge for up to 5 days.
Reheat any extra calzones by putting them back in the air fryer for 4-5 minutes until warm and crispy again!

Chicken Spinach Calzone
Equipment
Ingredients
Ingredients for the Dough:
- 2 1/2 cups self rising flour, 300g (or all purpose flour + 1 tablespoon baking powder + 1 & 1/2 teaspoons salt)
- 2 cups plain non fat Greek yogurt, 454g
- 1 tablespoon Italian or pizza seasoning
Ingredients for the Filling:
- 14 ounces cooked boneless skinless chicken breast, diced
- 7 ounces spinach
- 1/2 tablespoon butter
- 1 clove garlic, minced
- 3/4 cup cottage cheese, 165g
- 3/4 cup low fat ricotta, 165g
- 30 g freshly grated parmesan cheese off the block
- 1/2 teaspoon salt
- pinch of pepper
- pinch of nutmeg
Ingredients for the Topping:
- 1 large egg
- 5 g freshly grated parmesan cheese off the block
Instructions
- Preheat your oven to 350 degrees.
- In a mixing bowl combine all dough ingredients, less 1/2 cup of the flour. Set aside 1/2 cup of the flour for the next step. If the dough is too crumbly and not forming well, add 1 tablespoon of water at a time until your dough is a good consistency, You will need to use your hands to knead the dough together nicely.
- Using the extra flour, spread some on a flat surface for rolling out your dough. Use the flour generously on your hands and the rolling pin so it doesn’t stick. Roll out 1/6 of your dough at a time (this should be about 133g of dough per calzone). You want to make a big circle you’ll be able to fill and fold, about 10″ in diameter. Layer the prepared dough between parchment paper so they don’t stick together.
- Over medium heat, melt the butter. Add the garlic and spinach. Mix well until spinach begins to wilt. Toss in the chicken to warm up. Don’t cook the spinach completely, it will continue to cook in the oven.
- In a small mixing bowl combine the cottage cheese, ricotta, parmesan, salt, pepper, and nutmeg.
- Place both the chicken and cheese fillings on half of each dough circle. Make sure to leave the edges clean to allow for sealing the calzone. Fold the side over the filling and crimp the edges. Using a sharp knife score the top of each calzone 1-3 times.
- Whisk the egg in a small bowl and stir in the parmesan. Coat each calzone with the egg wash.
- Bake in the oven 40-45 minutes until the tops are golden brown.
- Let them cool and enjoy!
Notes
- Cook them in the Air Fryer to make them super crispy!
- 350 degrees for 8-10 minutes. The only bummer is you have to cook them in batches because most air fryers are much smaller than the oven.

How do these freeze? I would try them before baking I think.
Hi Linda, I haven’t tried freeing this particular recipe but I don’t see any reason you couldn’t freeze the pizza dough.
