Slice pork loin up into 1"- 2" pieces. Trim off any excess fat.
In a small mixing bowl combine all the seasonings. Season the pork well on all sides. If you have some extra seasoning thats ok, set it aside for later.
Turn your pressure cooker on to sauté. Heat up the olive and sear the pork on all sides. If using a slow cooker do this in a pan over the stove, or skip the sauté step.
Remove pork from the pot and use some of the broth, or a little vinegar, to remove cooked spices stuck to the bottom of the pot.
Add all remaining ingredients to the pressure cooker or slow cooker and stir well. Add the pork pieces back in the pot and set to pressure high for 40 minutes. Slow cook on high 4-6 hours or low 6-8 hours. You can quick or natural release the pressure when done.
Remove the pork pieces and shred. Stir pork back into the soup and serve or pack up for meal prep.
Reheat in the microwave 2-3 minutes.
