These cooler temperatures are perfect for soup! So, let me introduce you to on of my family’s favorites: Lasagna Soup! This soup is so delicious and topped with an amazing cheese mixture that gives you all the flavors of lasagna without actually having to go to the work of making an actual lasagna! It’s so filling and yummy and just perfect for those cold weather days!

INGREDIENTS

For the Soup:

  • Lean ground beef (93/7)
  • Italian ground sausage
  • Yellow onion
  • Carrots
  • Garlic cloves
  • Tomato paste
  • Crushed tomatoes
  • Beef broth
  • Kettle & Fire chicken broth
  • Red pepper flakes
  • Basil
  • Oregano
  • Mafalda pasta
  • Kale

For the Cheese Topping:

  • Part skim ricotta
  • Parmesan cheese
  • Part skim mozzarella
  • Basil

What Size Pot Will I need for this?

A BIG one! Get out your soup pot for this one! This makes a lot. I wouldn’t use anything smaller than a 8qt. pot. Here’s a pretty one on Amazon if you’re in need of a soup pot.

How Will the Macros Change If I Don’t Use Bone Broth?

The reason I used bone broth in this one is because it’s so high in protein, at 10g per 1 cup. I find mine at my local Walmart, but it’s also available on Amazon here. Just know if you’re going to use a traditional broth, your overall macros will be slightly different and lower in protein by about 4g per serving of lasagna soup.

You can use lasagna noodles broken up into pieces or any pasta you like.

Is the cheese topping included in the macros?

No, but the cheese topping can be logged in your food diary separately by searching the apps for, “Stay Fit Mom Lasagna Soup Cheese Topping.” Use as much or little as you’d like in your soup.

Lasagna Soup

All the delicious flavors of lasagna in the form of a warm, delicious soup!

Ingredients 

For the Soup:

  • 16 ounces lean ground beef, 93/7
  • 12 ounces Italian ground sausage
  • 1 large yellow onion, diced (300g)
  • 1 1/2 cups diced carrots, 225g
  • 3-4 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 2 cans crushed tomatoes, 56 oz.
  • 6 cups beef broth
  • 6 cups Kettle & Fire chicken broth, 48 oz.
  • 1/2 teaspoon red pepper flakes
  • 2 teaspoons basil
  • 2 teaspoons oregano
  • 16 oz. Mafalda pasta
  • 5 oz. kale

For the Cheese Topping:

  • 1 3/4 cups part skim ricotta, 434g
  • 1 cup Parmesan cheese, 112g
  • 1 cup part skim mozzarella, grated (113g)
  • 1 teaspoon basil

Instructions 

  • In a large pot over medium-high heat cook the ground beef and sausage until no longer pink. Strain any excess grease.
  • Add the diced veggies, garlic, and some salt and pepper. Cook until the veggies are soft.
  • Add the tomato paste and mix well. Add the crushed tomatoes, broths, and spices. Bring to a boil.
  • While the soup is cooking make the cheese topping. Combine all cheese topping ingredients in a bowl. Store in the refrigerator until ready to serve.
  • Once the soup comes to a boil add in the pasta noodles. Simmer the soup another 10-12 minutes or until the noodles are soft. Add the kale and let simmer a few minutes until soft.
  • Serve with a few tablespoons (or more!) of the cheese topping. Cheese topping needs to be added to your food diary separately. Find it in the apps per tablespoon.

    1. You can, just make sure to let it defrost completely before trying to stir it up so you don’t have mushy noodles.

    This soup was absolutely delicious! One of the best tasting soups and a very large portion. I was not hungry after. I didn’t even get snacky in the evening.
